On a lighter note, sure MW2 looks awsome, BioShock 2 looks decent and L4D 2 seems to be oddly promising but no game whatsoever can make me long more than what I do for Episode 3.

If it has to be a game currently in development, then I choose Star Wars: The Old Republic.
If it can be anything I want, I'd like to see a space-based game with Newtonian physics properly modeled and a deep and involved simulation of space combat including crew management and ship equipment. The possibilities here are endless and I could go on forever about what I want in this game, but it would be my "ultimate game." If there can be such a thing.
