I have long waited for ME to finally come to PS3 as I figured they would eventually package them all together. Thing is, I finally got a new PC in the meantime and now that I have the choice, which should I get? For reference my PC has a AMD 7850 2GB and Win7.

Things I'm concerned with:
Use of Origin (Don't have it yet)
Graphics (Screenshots would be great)
Control Schemes (How is using just a controller?)
Bugs

However I'll do a quickie for you:

Origin is required if you buy the trilogy I believe, so a slight downfall there if you hate it.

Graphics- The graphics are better for the PC, not as much as say dragon age/skyrim would be but it definitely does look better across all games.

Control Schemes- don't let the PC elitists fool you, it works fine on a console, I played the first two games without a problem in the slightest with a controller, but on the flipside it works great with mouse+keyboard also

Bugs- the occasional not sticking to cover right or ending up ON TOP of the cover (forcing you to reload the most recent save/checkpoint...urghhh) and the occasional texture popping, otherwise they are all well working across platforms.

would recommend PC just based on the fact you got a new graphics card and what not, but it's acceptable on the 360 I know at least, not sure about the ps3 (i'm assuming it works somewhat similar, maybe a slowdown here or there..)

I have all three on PC. While I can't say how they are on a PS3, I can tell that all work fine on PC. KB+M works fine for the controls. The only problems I recall with any other them is in ME1, I would get stuck in the terrain and have to reload. In ME2, the graphics would go all acid tripy and I would have to reload. They were rare but annoying. I got the first 2 via steam and the 3rd from gamer's gate but had to download via origin. Origin works similar to steam so you don't really have anything to worry about there.
