What I've seen of them seems good, and everyone else seems to like them, but I'm worried that they won't stand up due to age.
Graphically 1 may not, but it is still brilliant and is well worth your time if you are not overly fussed on graphics.
Although for the PS1 it's graphics are
astounding.
2 I am somewhat ambivalent about, it is by far the weakest Metal Gear Solid game. It rambles too much. Although if you can get the Substance re-release that is well worth it. The main game is unchanged but there's enough extra content and a bunch of Snake specific stories that are brilliant, there's also a really interesting documentary disc that comes with it.
MGS3 is a game you need in your life, no excuses.
The things that didn't quite work in 2 are refined to near perfection in 3, the gameplay is excellent, the story is excellent, the soundtrack is incredible. It's one of the best looking PS2 games released. It's also my favourite Metal Gear game, there are things in it that you will play through the entire game just to see again, it's that good.
I would have offered to post you MGS2: Substance and MGS3, but I already did give them to someone else, you shoulda posted three months ago!
