While I looked around some threads I noticed that even when the topic isn't all that interesting a lot of people sometimes go to them. There has even been a few instances of people actually complaining that there was no poll for the thread they were commenting on and ended their post with that. So what do you think?

I think they do, simply because even if you have nothing to add to the thread, you can still go and pick from the usually four or five options there are. Takes less effort.

It takes less effort for people; not only do they not even have to post to make their opinion known, they can also avoid a low content probation. Basically it's because people are inherently lazy. While they're there though, they might see something that catches their eye and comment anyway.
That's my reckoning of it.

I look at this and thought "poll, i'll go give my input and be a statistic." so Yeah, they do.

If it has a poll, chances are it'll get a lot of views, and certainly more responses on the poll than in the actual thread.

Not sure why though. I always post even if there is a poll, to let people know the reasoning behind my vote.
