I don't know if any of those builds could be called the REAL way to play Skyrim. There's fun in each. The power fantasy is easily rogue because of how game-breakingly (in a good "woohoo backstab, that never stops being funny" sort of way) overpowered it is. But there was much fun to be had as a character I played as kind of a goof, the tank "wannabe rogue." It worked well, heavy armor and 2 handed smashing implement, with no perks in sneaking. I'd level it up (for the exp) but without perks sneak has limited effect, so I'd get caught. "Aww they spotted me again..." tank, tank, cleave, cleave, cleave... "wheew, master thief reputation intact." Or when the level got higher and I could sneak up on one guy... "heh, I am the night" massive 2 handed skullcrush that could probably be heard 50 yds away and all enemies staring at the carnage in terror "aww, what gave me away." In it's own way that never stopped being funny either, and heavy armor tank is fairly overpowered as well.

Whenever I play Skyrim I always end up going for stealth and archery.

I've always wanted to play a mage, but I never do.

I'd go with option 2 for the archery fun. The main quest definitely ain't the highlight, so I'd go for the Dark Brotherhood and the Thieves Guild instead.
Yep, this. I never touch the main quest stories anymore.

Honestly, I've tried playing Mage, Warrior etc - I always just end up in sneaking, archery and dual-wielding fury because it's the playstyle I most relate to and enjoy.

What's grating to me is you can't be a stealthy mage, because firing one spell will get you instantly detected.
I never got heavily invested into the magic trees, but isn't there a perk for silent casting at one stage?
Not that I recall, but I could be wrong.
There is silent casting in illusion, you need 50 though. My every rouge mage has illusion though (Apocalypse Magic Mod + Illusion = Fun) so it's not a problem for me.

OT: I usually go spellblade with sword in one hand and destruction + restoration in the other or thief, mage thief with illusion / alteration and one handed for the most stabby action or just the vanilla thief with a bow.
In the end there are very few builds that just don't work, so I'd say: Experiment. This way you'll end up with something unique and fun.

In the Ilusion tree there is a perk for silent casting, but it is really far into the tree, i'm planning on getting it in my Rogue-ish character.

Conjuration and destruction magic, I always come back to this, nothing like having either two storm atronachs or dead thralls to support you whilst you rain down massive AOE fireballs on your enemy, sure you never invest in health, so if you get hit you die pretty quickly, but with powerful spells, stun lock and good enchanting to reduce spell cost, you won't get hit.

My elder scrolls experience is finding new, exciting ways to snap the game in half and everything stealth based does so beautifully.
Illusionists with their binary "either it does nothing or it basically instakills the target" spells are basically nothing but that.
Level up crazy fast by buffing npcs and let whole dungeons filled with stuff that oneshots you just stand there or fight against each other since the max level of affected creatures doubles if you get the dual cast perk so your low level illusion spells work on pretty much everything.

I had the most fun as a stealthy archer, but that's because stealth is so sick overpowered in this game, coupled with a braindead A.I.
I'd say in that regard Skyrim is less broken than Oblivion. I remember once sneaking was high enough, if you hit someone with an arrow and they didn't find you before their alert timer ran out, they would often just sit perfectly still while you fired shot after shot into them and they wouldn't even notice. At least in Skyrim they realize what's going on, sometimes while the arrow is still in flight.

I prefer stealth. And after reading a particular build type on...the skyrim blog ? (i think that's the site). I built a Skyrim version of Garrett from the Thief series, and just went around stealing from people without killing them. Was very fun.

I just ignored the main plot so that the dragons wouldn't spawn, and just ran around the world being the Master Thief.

It was my favorite playthrough ever xD

The storyline is pretty good IMO, though some of the plot missions can bug out in game breaking ways, forcing you to reload sometimes. But otherwise, it's enjoyable

*Edit*

That being said, I had a TON of fun playing my Son of Skyrim build. 2 handed Nord that focused on Shouts and ass kicking. Damn but that was a fun playthrough. Dungeon crawls were WAY faster. I'd walk in, FUS RO DAH! right inside the place to draw the attention of the first wave of badguys, cut them down, then walk further in and continue. There was no subtletly about it, just straight up "I'm here you undead bastards!! Come get me!!" and then glorious melee. xD That's definitely a fun playstyle as well, but stealth is my preferred type.

Well, the melee combat in Skyrim is about the most floaty, weightless shit I've seen. It has no power, no punch, no sense of lethality behind it at all. It's thoroughly underwhelming and unsatisfying.

With an archer character, I'll sum it up like this: *arrow sticking out of someone's face. He turns around and speaks, with the slightest of concerns* "Is someone there?"

...

So that leaves magic, which is pretty fun. Using a combination of buffing spells, summoning magic and some destruction, you can have the most varied and enjoyable experience in what is mostly a pretty shallow game. So I'd recommend that playstyle myself.
