...make her a warrior, paladin, or monk? Warrior seems the obvious choice, but she mainly uses martial arts, which makes me lean towards monk. What do you guys think? And yes, I am in fact a gigantic nerd.

Human Female Monk or Rogue seem like the obvious options, depending on how you'd prefer to play.

No idea about WoW, but - maybe depending on subjective semantics - Buffy's flirted with the spiritual side of kicking peoples asses, so I'd say monk.
