Jedi Outcast/Academy hands down. I tried top play Dark Forces but it hasn't stood the test of time very well, fun for the story (both lore and game wise) but outdated.
I can honestly say I have played Jedi Academy upside down, inside out, good side, evil side, hard, easy, medium, piss easy, one lightsaber, two lightsabers, kickass Darth Maul lightsaber, any bloody way possible and It still doesn't get old. Think about it, the lightsabr is both esthetically and functionally the ultimate weapon, it offers intense close combat without crippling you in range combined with force powers it is a very simple but still awesome way to kick ass. Jedi Academy puts it to the max, there is everything you want in a Star Wars game, sure the story sucks (speaking mainly of Jedi Academy, Jedi Knight/Outcast was alright, but haven't played them as much) but the awesome gameplay makes up for it twofold. Only bad thing was that the light/dark side choise came in so late and so obviously.
KotoR was great, but not because it was Star Wars. I see it as a completely different game, even though set in the Star Wars universe it didn't feel like Star Wars, it didn't milk off the movies, it stood awesome by itself. Too bad the story went from brilliant to messy in the second one
Battlefront is an awesome concept but it's crippled by an awful multiplayer community, maybe it is just me (never liked FPS communities at large)but almost all servers played the same map and were packed with germans who refused to speak English. And singleplayer is not that fun

Still, it makes a good LAN game if your i play with fellow Star Wars geeks.
Podracer was actually kind of fun, underrated in my opinion.
