I was a melee nord in morrowind and my first run of oblivion. so it's very likely I'll be one in skyrimm. They tend to simply have the best raw melee stats

Nord. No question about it. I haven't prperly played a Nord before and Skyrim seems the perfect place to start.

Nord for my first playthrough at least. I've noticed in the Elder Scrolls game's I tend to go the race that goes with the area. In Morrowind I usually went a Dark Elf, In Oblivion I usually went a Human and in Skyrim i'll most likely usually go with the Nord's.

Depends on what I want to be. If I want to be a mage, then the Bretton / The antroch is the only thing that comes to mind. (I don't see why you would use different combinations).
If I want to be a thief then Bosmer / The steed seems like the path to go.
If I want to create a perfect character then the personality / endurance / merchant bonuses for a imperial with the lovers as a sign is my choice.
I've never been a warrior, but I hear redguards are good for those. (What are the other races for really? I mean I get the darkelf as a decent starting character. But all others?)

I will probably create a 'I can screw up and explore as much as I like with this character and not care' first time around. And he always ends up being Dunmeri for some reason.

My main character choices solely depend on the lore. So if the Dovahkiin truly is of Septim descent as is implied by the whole DRAGONBORN thing being emblazoned on everything to do with the upcoming game, then probably an Imperial. And I've already picked a name XD

But I'm likely to create at least one character of each race simply to see what the differences are in gameplay, and to change my playing style depending on their abilities.

*EDIT* Oh, and as for classes, I quite like playing as either Knights, Barbarians or Nightblades

I usually make a Redguard customised for sneaking, lockpicking and all the other espionage type goodies. Plus making use of a bow has always been my favourite thing to do, I can run and shoot, sneak and kill from long distances. In Oblivion I made sure to do mage quests just so I could enchant a bow with +5 Fire, Shock and Ice (or higher if I could manage it), multiply that by Sneak Attack damage multipliers and -everything- is in a world of pain.

How could they be of Septim descent (spoilers) if the last of the Septims dies in Oblivion? And don't say they had a child because he spent all of his life in a Church of The Nine. The whole point of finding him anyway was that he was the LAST of the septims, so there can't be anymore 200 or so years later.

In Morrowind I was a Redguard. I really like my own custom class in morrowind with STR & END as the main stats and the star sign being 'The Lady' because I started off with 50 long blade and 85 END with 60 STR. In Oblivion, I made my own class cause I dislike the look of all of the races but I somehow played through all of the quest with each class to see the differences in dialog.
Skyrim I might start off with a Nord due to the location or maybe an Orc with a class focusing on STR and END.

(spoilers) The Dovahkiin in Skyrim is not a descendant of the Septims. That line did end in Oblivion. Your PC will be the first Dragonborn in 200 years since Martin died.

OT: I played as an Imperial in Morrowind and Oblivion, and I don't see myself changing anytime soon.

This.^ I like Ice themed characters. It is too bad there are no ice themed wizard classes. Oh well. Lizard people who can breathe underwater are cool too.
