Here is my list of which i like in order:
1)Leafeon (green being my favorite color probably factored in)
2)Glaceon
3)Espeon
4)Vaporeon
5)Jolteon
6)Umbreon
7)Flareon (really hate this one for some reason)
I'd sooner not evolve my eevee than make it an umbreon or flareon.
Espeon has telekenisis
Umbreon has natural light
Glaceon would be nice to have in winter and summer
Joltion is a walking battery
Vaporion is would be great for fishing
Flareon and Leafion.... I actually have no idea what they could be used for, save bodyguardsmanship.
So...I'd choose Glaceon actually, I have too many ideas of what I could do with it.
Jolteon. Lightning is awesome, plus A) it's original generation, which makes it more awesome than the others, and B) Flareon, an equivalently awesome element, looks too fat and fluffy.
Keep Eevee... Long enough to catch another Pokémon so I can put Eevee in the PC to rot forever.
Okay, Espeon isn't bad, but there are better psychic types and I've had my fill of Espeons from the GameCube games. And Jolteon was decent in Gen 1, but after that... Yeah, I'm just going to bench Eevee ASAP.

Having had nothing to do with anything past the original pokemon, my opinion is somewhat invalid here. But, I voted Leafeon, because somewhere, I have fan art of something similar from way before it actually existed as a pokemon. Now I feel the need to attempt to dig it up.
EDIT: On closer inspection, the image is lost. And no where to be found through google image search. It come with a pokemon computer card game in the 90's, which was supposedly licensed, but I doubt it.
The eeveelutions are probably my favourite set of mons in any version. They all fit the pokemon aesthetic perfectly - they're elemental in obvious ways, the names are themed and evocative, and the visuals are cute without seeming infantile and dangerous-looking without seeming threatening.
Too many of the new pokemon have names or visuals that are essentially tricks to confuse you about the true type or really bizarre type mixtures that were very clearly only created to fill a type gap for gameplay reasons. Also, the games keep going back and forth between everything being cute and everything being scary, alternating almost perfectly with each new release. The best pokemon have always been the ones that sort of straddle that line.
Edit: Oh and Umbreon, just like everyone else, because dark is the "cool" element (psychic being a close second) and because I absolutely love the simplicity of the art concept.
This makes me want to go back and rebuild my baton-pass eeveelution team
