I notice a pattern emerging with the people's votes regarding the Rebuild series: those who haven't yet seen 3 hold the Rebuilds in high regard, while those that have seen 3 (myself included) tend to have a
slightly different take on it. Just a thing I noticed, maybe worth looking into.
OT: I've seen the original series, EoE movie, and the Rebuilds, and I think the original series was the best of them.

What I love about Evangelion is how it starts off fairly down to earth, or at least as down to earth as a show about giant mecha can be, then progressively gets more full of mind-fuck the further it progresses. It's not until you're about two thirds of the way into the series that stuff really starts getting weird, and all the real mindfuckey stuff is weighted towards the end when everything is collapsing.
...the original series, for all its production hell, felt effortlessly paced with the writing and the weirdness. It felt like one long descent into hell
This about sums my thoughts up. When explaining the series to people I usually tell them "this is a mecha show in the same way that Batman movies are nature documentaries". The original series was a character-driven pot-boiler that uses the setting as window-dressing for the real story. The audience is hardly given any information about Seele, Instrumentality, or anything else really because
you don't need to know any of that to get the point of the story, although I didn't really appreciate that during my first viewing.
