Poncho does not die. Just as he is about to be shot in the head, he trips on the undergrowth, hits his head and is knocked unconcious. The skull with the hole in it that you see the Predator polishing later is Jim Hopper's.
Poncho later wakes up and spends his nights in a local bar drinking with Sgt Apone from Aliens, who also does not die.
