Most of my choices have already been listed, but I have one which never seems to come up: Urban Chaos: Riot Response. If you're looking for a first person shooter it's the best one I ever played on PS2. Basic storyline, you play a Riot cop in a city that's gone to hell because of a gang of arsonists, aptly named the Burners. You have access to a pretty decent arsenal, plus an upgradeable taser and a riot shield which can be used to deflect bullets and also bash people's heads in. There's also some decent gameplay to be had in directing allies such as firemen and EMTs to rescue civilians, but the saving grace was the upgrade system. It reminded me of GoldenEye quite a bit, you had to complete certain objectives within a level to upgrade weapons, magazine capacity, armor, the taser, etc... The tasks usually centered around completing an objective in a time frame, taking out so many people with head shots, using non-lethal takedowns on so many people. So it required some skill to get better, because it wasn't always easy to take down a gang leader in a nonlethal manner, but it was still possible and very satisfying when you did it.
It came out rather late in the life of the PS2, 2006, and the only reason I found out about it was because there was a demo for it included with a copy of Hitman: Blood Money that I rented. Still a great game, and I'd love to see a sequel.

Good man. [http://www.vooks.net/forums/index.php?/blog/33/entry-343-the-daily-grind/]
And at the risk of being Captain Obvious, God of War and Ico/Shadow of the Colossus are the main ones.

The Brothers in Arms games are awesome if your into WWII. I thought Cold Winter was pretty good as well.

Not sure if this one has come up yet: Odin Sphere. It's probably the most unique RPG I had ever played for the PS2. I had just recently discovered it, but apparently it came out in the better years of the PS2. It has a very dark, medieval tone to it and the combat system is fluent and face paced. What's interesting is, elements of momentum and sense of speed are very apparent during battles. Honestly, I've never really seen anything like it.

As far as platformers go, I don't think you can beat any of the Ratchet and Clank games. I really mean any of them. At all. They were all pretty great.

All the Timesplitters games. Timesplitters, Timesplitters 2, and Timesplitters Future Perfect. The greatest games ever made by man.

I also suggest:

Metal Gear Solid 3
Freedom Fighters
Beyond Good and Evil
Shadow of the Colossus
Dragon Ball Z Budokai 3
Mercenaries
Jak and Daxter trilogy
The Ratchet and Clank games
God of War 1+2
Grand Theft Auto 3, Vice City, and San Andreas
Prince of Persia Sands of Time
Okami
Maximo

Get those games. They are awesome.

Let's see if I can name some that haven't been mentioned..

Disgaea: Hour of Darkness (this is assuming you don't own a PSP)

Disgaea 2: Cursed Memories

GrimGrimoire

.hack//INFECTION, //MUTATION, //OUTBREAK and //QUARANTINE

Baldur's Gate: Dark Alliance series (It's more of a Diablo clone than a BG game, but it's fun)

Devil May Cry 1

[sub]get the feeling these have all been recommended, so be it[/sub]
