Because the artificial coloring in the multicolored soaps doesn't bond to the water and dirt particles, it just washes down in a mixture with the water that isn't bonded to the soap.

1. It's the way that humans in general work really. A standard has been set for expectations, but it's those who defy the expectation that get noticed and accepted 6 times out of 10. Others will honestly just put up a front just to make themselves seem slightly less... [insert quality here I guess].
