Full Metal Alchemist: Brotherhood

One of the most kick-ass, modernist (philosophical), twisting tales I've ever watched; FMA is deep, compelling, and never slows down for filler (because it has none).

Death Note

A guy finds a notebook that allows him to kill anyone by simply writing down their name. He decides that he should use it to clean the world of criminals and become the God of a new age. God-complexes, mystery, and suspense all combine for a amazing experience, even if two of the characters have tacky tastes in clothing.

Oh, Elfen Lied is another good one.

The premise alone is worthy of checking out.

I would suggest:

The Big O. It's a mecha series in a style reminiscent of Batman, with some really cool background and psychological stuff going on. After a point it kind off starts making you question everything you've come to know in the show. Awesome stuff.

Eureka 7. Another mecha(although they aren't really mechs(you find that out later)) series that has a big focus on romance between the two main characters, but also has a really intruiging story. Fairly long watch at 50 episodes

G Gundam is great if you just want to watch something classic. Make sure to see the Dubs, because they're hilarious.

Also, Trigun(Must see) and Black Lagoon(I read the manga)
