You could play WoW and get a mod to make other players not appear >___>

In seriousness though, you may enjoy Euro Truck Simulator. It isn't my thing, but apparently it is a very relaxing game.

Other than that, Minecraft and Terraria are both good choices too.

Most 16-bit era RPGs would fit the bill. I remember grinding random fights in Breath of Fire 1 and 2 for hours... though I think the most time I ever put into one was getting every character up to level 99 in Final Fantasy 6. Getting the paladin shield was no small grind either.

Payday 2 is quite grindy...

And there are usually enough players online to make it interesting...

Grinding to level 100 is pretty long... Then with the latest "infamous" update, you have to grind to level 100 about 6 times...
With further grinding planned for the future...

On the harder difficulties it can be a bit challenging though... But if you're going solo, it's not really recommended to play on the tougher levels anyway...
You don't really have to think much... shoot shit until you win... that's about it..

Any of the Diablo series are good grinds, OP, as well as Minecraft and Borderlands which have already been mentioned. I can't really give any more suggestions without knowing what platform you're after.

So relatively stress free but still grindy (or is it grindey?)?

In that case I'd probably say any of the Saints Row games bar the first one. As much as I love them (well, I don't think The Third is all that great), I'd say they are pretty grindy. 2 requires you to do the mini-games in order to gain enough respect to do the missions, and you have to do multiple levels of each mini game to get more respect. It's fun and grindy at the same time, plus beating hippies to death with baseball bats while dressed as a cop never loses its appeal.

Saints Row IV is incredibly grindy as most of the missions require you to do multiples of things and have a decent length about them, but superpowers and the writing will act as a good frame for it.

Persona 3 and 4. Very grindy in parts, but also incredibly awesome. Bravely Default has been mentioned, and I totally back that. It's definitely quite grindy. And you can customise your options, turn off exp gain, increase or decrease mob encounters, change difficulty midgame. And it, again, is just an awesome game in its own regard.

Any game in the Disgaea series. The game is literally about grinding.
There was even an article on the escapist about it a long time ago titled "Grinding to Infinity"
http://www.escapistmagazine.com/articles/view/issues/issue_191/5808-Grinding-to-Infinity
This, there is no other game Ive spent the amount of time on as disgaea. Hours upon hours upon even more hours to get to that final 'secret ulti' boss...only to get demolished and go grind more. If you want something to grind...get Disgaea haha, any part will do though if to give any reccomendations, Id go for either part 1 (PS2/reboot on DS) or part 4 (PS3)

If that doesnt suit your style though, a game I can also approve of would be Binding of Isaac, you can get it on Steam for a few dollars and because of the unlimited amount of powerups/map changes you get...you can also rage quite a while at that one until you unlock all endings/beat it with every char/unlock all powerups.

Pretty much any JRPG if you play to 100% it.

Recommendations:

Any of the core numbered Final Fantasys.
Lost Odyssey.
Tales of series.
Dragon Quest series.
The Last Remnant (though not useless you are willing to spend a few hours learning how and when to grind first, the game requires allot pre-planning to 100%).

Or you could just get any Assassin Creed and spend hours flag/feather/treasure/other collectables hunting.

Enchanted Arms is really grindy.
Its really old now and there are probably even grindier JRPGs but I haven't played any of them yet.

I do remember grinding quite a bit in Lost Odyssey but I don't think it was anywhere near as much as EA.
And obviously any Pokemon game can be grindy even if its just doing the elite 4 over and over again.

I can confirm that Ni No Kuni does have a fair bit of grinding to it. It's not an easy game by any means, and grinding xp, crafting materials and money for more mats is going to be close to half of your total play time. Worth it, though.

Has anyone mentioned Dragon's Prophet yet? Really, any Asian MMO is going to have some mindless grinding to it.

Torchlight/Torchlight 2. Okay, maybe not so much grinding, but there's a lot of mindless running about and killing going on.
For that matter, a lot of dungeon crawlers are kinda grindy. Shoot, even Pokemon Mystery Dungeon (the one that I did play on the GBA, at least) has that going on.

Travel back in time to when the NES was the greatest thing since sliced bread wrapped in a plastic bag. When you do, immediately purchase and/or obtain by any means a little game known as Dragon Warrior.

Then get Dragon Warrior 2.

Then get Dragon Warrior 3.

By the time you're done with all three games, you should have returned back to our current present time.

Torchlight II is a pretty good, grind-filled time sink. Also, THERE'S SO MUCH LOOT!!! [http://gamechurch.com/wp-content/uploads/2012/10/Torchlight-2-loot1.jpg]

Cladun X2, while not something I would necessarily recommend, certainly does have a large amount of grinding in it. It's leveling system works in the same way as Disgaea's; You can only level up to 100, but characters can change jobs and keep a percentage of their stats. If you want to beat the game or have any chance of beating the two optional randomly-generated dungeons, you have to change jobs at some point. And unlike other games, Cladun X2 doesn't make that grind seem intimidating. In a way, it makes beating the end-game content seem possible. Hell, I almost did it myself despite never having been intrigued by end-game content in any RPG.

Play one of the portable Persona games on very easy, in which you can respawn after dying on the spot. If you can't play that, maybe try a Kingdom Hearts game on easy mode. The arena is definitely up your alley for grindtastic.

I'd recommend Disgaea D2. Like every other Disgaea game, it's grind-tastic, and it's also the most forgiving since you can't technically get a game over (in the others, you'd have to actually reload your save if you lost. In this one, you're sent back to the main hub and you don't lose anything).

I think D2 is, mechanically speaking, the strongest game the series has had thus far.

Mainly, it eliminates a lot of the pain points:
1) No longer have to reverse pirate to get statisticians (they just appear regularly).

2) Changing monster strength doesn't require a bill to be passed (which was pointlessly lengthy and annoying).

3) Monster Senates can now be bribed (good for when at the end game you literally have 30 trillion dollars with nothing to spend it on)

4) Monster senates for items isn't a random chance in the item world; you can just call them whenever you want.

It just takes a lot of the boring grinding out and lets you do the grinding that's fun :)

Disgaea is the correct answer.

White knight chronicles 2 is a pretty brutal grind too. 2 over 1 because you can use your story team to take on online missions.

Edit: Wow, somebody mentioned enchanted arms above. Effin loved that game. And the post game bosses require insane levels and very specific skills. One of those games where I wished they came out with a trophy patch :)
