Gonna go ahead and recommend Suikoden 3 here, while you may want to find out what the best order is to play it's story (since you play as 4 different people) it's story can be kinda messy on the first play through.
I will also throw out Star Ocean: Till the end of time. I remember it being pretty decent, albeit I was a bit younger when I first played it and haven't gotten around to replaying it like I've been meaning too.
And last but not least I'll toss in ALL the .Hack games and the OVA (I think that's what it's called?) the GU games play and look much better than the first set of 4, but I'm not sure how well you'll understand the story without the original 4 to help make you understand everything that's going on in the latter 3 games

I saw most of my suggestions above. But one I can add to the mix is Trapt. Trapt is the unofficial 4th game in the Tecmo's Deception series. Horrible controls, terrible interface, pointless and stupid story, and some of the worst voice acting since Resident Evil. But still close to the most fun you can have with a ps2. This is a game that judges you on how prolonged, painful, and cartoonishly over the top you make the death of your enemies. The longer you can keep them juggled in the air after smashing them with a hammer before landing on a spiked electric chair that they stumble out of, slip on a banana peel into a pit of oil they are then crushed into with a burning boulder.
It's that funny.
