12 Angry Men: Not for the attention-span challenged, but this movie is a classic! :D
Monty Python and The Holy Grail: GET. THIS. MOVIE.
The In-Laws (with Alan Arkin and Peter Falk): A timeless comedy! It's great!

Try Moon, an indie-film which is brilliant.

Basically about a man on the moon. Yeah it looked boring to me as well but when you see it, you'll be blown away.

Considering the OP's list I will suggest '28 Days Later'

Do not, NOT, waste your time on '28 Weeks Later' or '28 Months Later'

Eh, its mighty slow at times, and really could have chosen some better film noir segments, but does have some brilliant moments.
Like his cuppa joe - that still makes me smile.

Reading your list, the first movie to come to mind is Red Dragon, a remake to the prequel to Silence of the Lambs (which I recommend more if you haven't seen it.)

Other than that, I'd just be listing off either my favorite movies or ones already listed, Se7en being on both those lists.
