I can see why the duelling can be annoying, but honestly you get the hang of it pretty quickly as the game progresses. I found that your opponent will almost always take 3 steps (sometimes 4) before drawing, and the music will sometimes hint at when they're about to draw (it'll go quiet just before the bell tolls - but not every time).
One of the things that I really liked about the game was that, despite having at least one cpu controlled ally accompanying you for most of the game, I found that they never get in the way, never need babysitting and will kill a few enemies but never so many that it feels like they're taking away your fun. There are too many games where allied cpu's are a major hinderance.
