Well, there were the "pro" instruments.
Yeah, I'm aware of the pro instruments, but they really still weren't even close to the actual experience of playing those instruments. You might, MIGHT, be able to pick up some basics from them, but there's a huge difference between pressing some buttons and strumming some plastic strings on a guitar peripheral, and actually playing on a real guitar. So much so that if you learned on the former, it still wouldn't teach you anything about the latter other than where the notes are. Which isn't really a simulation in my mind.

Same for keyboard and the other things, though those fair a bit better.

Did you ever play the pro-keyboard?
Well, obviously not, as the pro-keyboard was the literal act of playing that song on the keyboard and if you'd played it you'd know that...

Learning on a MIDI guitar is a progressive step and probably worth a go for anyone who actually wants to learn. It won't teach you everything, but it applies a bunch of the same skills and techniques. It probably doesn't hurt that MIDI guitar and 25 key keyboards are literally real instruments, either. You probably won't be playing "Cult of Personality" on an electric guitar or "Bohemian Rhapsody" on a grand piano, but I doubt that's the intent here.

Truth be told, the MIDI guitar is probably better than the drums for learning.

Well, except you're only using one hand, which most of the keyboardists in the songs from the game weren't doing.

They did also release an actual proper guitar that you could use for Rock Band Pro mode and plug straight into an amp. No-one used them though as they were hideously expensive.
