Skyrim, Daggers.

I'm trying to make a good assassin with daggers so.... What is the best armor and daggers for a Khajiit. (Race probably does not matter)

Well with my Assassin I only had one dagger and a deardic artifact sword. Seriously get a sword as one of your other weps because an assassin is a hard class for the first 15 or so levels, and combat never gets a lot easier. Also the Dark Brother Hood and Thieves guild give you some very very good armor, as for weapons I would say get just the best dagger available at the time really.

I run with dark brotherhood armor and whatever daggers do the most damage. My goal is ebony or deadric daggers one life steal other soul steal.

Only other advice I can give is sneak all the time. Even walking cross-country, it'll give you a few levels, and the faster you rank sneak, the more sneak attacks you will get and the sooner you will get the 15Xcrit for daggers.

Sneak was my top priority when it came to my assassin, now I'm able to one shot Master Dwarven Centurions on normal difficulty. Just have to be careful when you get discovered. A bit difficult to fight a group at times, other times you can just assassinate the whole group.

I level my smithing to atleast 90 and have legendary(when you sharpen blades thru smithing) Blade of Woe from Dark Brotherhood, with shrouded gloves wich doubles sneakattack damage with melee weapons. With the backstab perk in sneak you do 15 times damage sneakattack with daggers, so with the dark brotherhood gear you do 30 times damage with a dagger wich has about 50 maxdmg(depends on various perks and blacksmith droughts etc).

So i just go around and stabby stabby

The Nightingale Armor (if that isn't the name, the armor from the Nightingale questline)is, if not the best in terms of stats, probably the best looking armor in the game aside from Ebony armor.
