And I just can't get into it. The pacing at first is so damn slow, and I keep quitting to do other things. Is there any advice for making a good start? I hear a lot of interesting stories about it, but eh...

it's probably just not the game for you...a good civ game will span several long sessions, it's not something you get a quick 10 minute match of in between other things.
or.. maybe think of it more as an rpg than an rts...your civ is your character and the first few levels are always a bit dull but can be crucial to developing what kind of skills/powers you'll end up having down the road.
