So I'm getting a new Xbox 360....Advice please?

Right, so here's the deal. I have a house in italy which my family visit during the holidays, including christmas. Back In Christmas of 2007 I received an Xbox 360. Eventually I got Xbox live, and then slowly made my friends list. Since getting my Xbox, My friends have been asking me to bring it here to england so I can play it more often. I kept on saying no, because It would be too inconvenient having to bring it back and forth between countries.

Now, with the recent batch of new games with WIN multiplayer(i.e. Red Dead Redemption, Splinter Cell: Conviction, etc.) I have been tempted to buy myself a 360 arcade for england (because it's cheap and doesnt come with a hard drive, perfect because i don't need one). Now, thing is, the closest time i'll next be visiting my house in italy will be in the summer. What this means is that I can't actually play online with friends until I get my hard-drive(i.e. end of summer). So we get to the main point. I have two questions, and an optional one.

1. Let's say I buy Red Dead, and I play the single-player, saving the data on the small storage unit that comes with the arcade system. When I get my hard-drive,(with my account on it) will I be able to transfer data from memory unit to hard-drive, or keep the data on the memory unit and still be able to play live with the hard drive?

2.And saying that the above isn't possible, then what good single-player games can you suggest to me whilst I wait for summer(that DON'T require a hard drive, thank you Mr. Wake)?

And the optional question:
I've decided to buy the system from amazon.co.uk, but a friend says there are cheaper prices out there. True, but I don't want to risk going on an auction site like eBay and finding that "Very good" condition means the package doesn't come with a storage unit and controller. What websites can you suggest me that sell 360 arcades officially for a price under £130?

1. Up front I'd like to point out that the latest dashboard update lets you use a USB stick or HD as a Memory Unit for your 360. And I believe it'll let you transfer saves to it from a hard drive. This link might have more info

2. Batman: Arkham Asylum doesn't need a HD if I'm not mistaken, if you haven't played it, it'll give you a run for your money

I already have a PS3, just that I don't have any friends on PS3. So the reason I'm getting a new xbox is to play with friends.
