I love it borderline Blue/Rare. Basically blue but with enough heat in it for warmth. Then a little bit of English mustard.

Otherwise well done with a lot of cheese on top so that it's some sort of cheese/steak monster!

Big with not much fat and bloody as hell as long as its still hot and I have a sharp knife.. if i'm cooking for myself i'll have a big steak with nothing extra. Sometimes I fry an egg and put it on top. Best breakfast ever.

A porterhouse rubbed with garlic and a dash of Kosher salt and ground black pepper, cooked over coals, not propane. 10 min before it is cooked to medium rare add a dollop of blu cheese held together by plain yogurt. Let rest wrapped in tin-foil for 10-15 min and enjoy.

Hey, you should see the amount of oil I use in frying eggs and sausage and bacon, and I have that most days... If I haven't had a heart attack yet then I should last a while longer :D

Medium rare with a pile of fried onions a mound of boiled potatoes with sour cream and Lea&Perens steak sauce on the side. Yum

New York Strip, prime dry-aged, Mid-rare, either plain with a little salt and pepper, or with a nicely-done bbq beurre blanc, bacon and butter mashed potato and a side of asparagus with bearnaise.
