I've seen this pattern for game trilogies. The third and final installments hint to events that happen outside of the trilogy. In Halo 3, Cortana quotes lines from the Halo novels. In God Of War 3, Helios hints to an event in the PSP title: Chains Of Olympus. And I hear that in Gears Of War 3, Epic is going to include characters from the Gears comic book.
My 2 questions are these:
1. Why do developers do this?
2. What other games have followed this trend?

Well for your first question, it's just cool little Easter eggs for people who've played/read the extra stuff.

For the second one, nothing springs to mind.

because it's set within a world where those things happened.

It would be like if you and your friends went to two together, then you had to miss a third one, then went to the 4th one and asked your friend what happened at the third one and he was like "I don't know. You weren't there so there's a totally mysterious gap in my memory exactly the size of that thing."

Just because you didn't see it doesn't mean it never happened.

1. Because everyone loves that nice feeling you get from being in the know about something.
2. I have no idea.

1: It's pretty neat.
2: The Silent Hill series did this a lot.
