Trigun and Cowboy Bebop are probably your best bets. I got into them before I got into anime and allot of my anime hating friends liked those shows as well.
Vision of Escaflowne, Ouran High School Host Club, the original Gundam movies (forget everything about Seed and Wing and the terrible taste they have left behind before watching, it helps) and Full Metal Alchemist might work as well.

Just try to avoid standard shounen crap like Naruto, One Piece and Bleach. Though One Piece did have a few good comedic moments, and Bleach had some decent original ideas at the start, they all blend together to create the same show at some point.
If you DO want a show that involves plenty of fights but does it slightly differently, try out Hunter x Hunter or History's Strongest Disciple Kenichi instead.

*EDIT* I forgot Death Note. Death Note is amazing.

Last night (I think) I was on a bunch of Anime related threads disputing a number of things with anime fans including the english language, trolling, how to spell Hannah, the quote button and why I don't like anime (I keep wanting to put a capital A at in anime for some reason). Now I said at one point (I think) that I have tried to like anime or at least find out what the big deal was about it in the past and failed to do so. But mabye I was going about it the wrong way so what would you suggest to someone who has hated the subject for years but would be interested to find out if I could like it?

Oh and as a side note I cannot stand subtitles on anything so I don't think any of the non-translated stuff that alot of people seem to enjoy would work for me.
Devilman... check it out (easily the greatest anime ever, coming from a guy who doesn't like much anime anyways)

As a former anime hater myself, I recommend the two series that got me into anime, Blood+ and Wolf's Rain.

Devilman is an amazing classic. Right up there with the original Fist of the North Star/Hokuto no Ken.

/sigh

there's a difference between good anime and good anime to start with. i'd never, ever suggest EVA to someone who'd never seen anime before. nor would i suggest something like bleach or FMA that drags on for dozens of episodes. you want something that's relatively short and easy to wrap your head around while also grabbing you attention quickly and not letting go.

i'd say either cowboy bebop or trigun (though that takes a little while to really get started.) maybe the bebop movie too?

EDIT: definitely adding samurai champloo, akira would be good too. .hack//sign was really good but it's been way too long since i saw it. FLCL is probably my favorite anime ever but too much of the humor is based on anime culture to begin with.

although its best to leave your brain at home for this one
Why? its people fighting with the power of their awesomeness, why would I want to leave my brain at home for that?

Also: Why has no one said Eureka 7? Ok, so maybe Im a bit of a fanboy but still Eureka 7 is an awesome anime, its got a great story, soundtrack, and even good sub-plots. I whole heartily recommend it.

Well, tough luck for you pal, because all the good ones are subtitled. Rarely do anime remain as great when it gets dubbed. The only good English-dubbed ones I can recall are Full Metal Alchemist and Cowboy Bebop.

Snip list
The only way this post could be better is if the listing was made alphabetical. Or if it included Grave of the Fireflies. I guarantee you, the last few minutes of that will leave you WEEPING.

It really depends on what kind of genre you prefer, just like with movies. Only that anime include some genres you probably haven't heard of, but you'll understand them quickly. I recomend this site [http://www.anime-planet.com/] for getting a general idea of what to expect from each anime.

My personal favourites: Code Geass, Death Note, Elfen Lied and The Melancholy of Haruhi Suzumiya(interesting plot), but I'm feeling too lazy right now to post anything about them.

Well since you can't stand subtitles, I'll omit my suggestion of the original Bubblegum Crisis OAV from 1987-1988 as it's been my favorite Anime for almost 15 years and is incredibly painful to watch in English. Original Japanese audio with subtitles is an absolute must! That being said, I also DO NOT recommend the late 90s remake, Bubblegum Crisis Tokyo 2040, because it was inferior in presentation, soundtrack, and overall plot.

Safe recommendations are as followed, however.

Akira (1988, single movie)
http://en.wikipedia.org/wiki/Akira_(film)

Gunsmith Cats (1995-96, 3-part OVA)
http://en.wikipedia.org/wiki/Gunsmith_Cats

Dominion Tank Police (1988-89, 4-part OVA)
http://en.wikipedia.org/wiki/Dominion_Tank_Police

Iria: Zeiram the Animation (1994, 6-part OVA)
http://en.wikipedia.org/wiki/Iria

Angel Cop (1989-90/1994, 5-part OVA)
http://en.wikipedia.org/wiki/Angel_Cop

Black Lagoon (2006, 24 episode series)
http://en.wikipedia.org/wiki/Black_Lagoon

Akira, Angel Cop, and Black Lagoon definitely fall into the mature category for graphic violence and language. Not sure if that's your thing or not.

Well I'm not completely sure what YOUR into. But I can give suggestions based on my favorites.

I recommend XXXHolic, Mushi-shi and Hell Girl. All are relatively 'light'. While there is an over arching story most of the episodes are fairly episodic. They don't beat you over the head with a story that's hard to follow or filled to the brim with twists. The characters in all of them are pretty likable and original.

I also Recommend FLCL/Fooly Cooly. It's short at only six or seven episodes long but it's a pretty amazing anime. It's heavy on humor but it has these deep serious moments you'd think they'd be at major odds with the rest but it actually works for it. The chracters and art are really unique.

Films. Akira and Ghost In The Shell.
I didn't really like ghost in the shell all that much. I got lost after the first few minutes so it was pretty much downhill from there.
Did you watch the show or did you actually see the movie? GITS is kind of weird, because there's three different cannons. There was the original manga. The first two movies, Ghost in the Shell, and Ghost in the Shell: Innocence used some characters from the manga but made their own stories, they're the second cannon, and they are stand alone movies. Then there was the TV show, the third cannon, which again uses the same characters, but the story lines conflict with those of the first two movies, there were two seasons of the show, and a movie "Solid State Society," and if you came in and watched some of the later episodes of the show without watching the earlier ones, I can see how it'd be rather confusing. That said, if you haven't seen the original two movies, give them a chance, they're not just anime classics, they're sci-fi and cyberpunk classics.

Other suggestions, Akira has already been mentioned, it's one movie, but it's very good, although the manga is better. Fullmetal Alchemist is very good, again the manga is better. Evangelion is an older series, based around a lot of Freudian ideas, but it's also really good. All of these can just be enjoyed for their surface content, but they all also present a lot of opportunity for deeper thought, which is what I find I really like about them.
