Suggest me a Vegetable!

Okay, so it's time for something completely different from the usual "suggest me a game" thread.

Recently, after reading Michael Polan's excellent book Food Rules: An Eater's Guide I decided to start eating healthier. Now, granted, I don't live the world's most unhealthy life to start with. I do exercise every day, and I rarely ever drink soda. But Polan's advice "Eat food. Not too much. Mostly plants," has actually worked really well for me. I've lost that last little bit of belly fat that I've been working to get rid of for forever (an accomplishment which my previous exercises and even diets never accomplished. And the most important step was removing the vast majority of processed foods from my diet, and replacing them with plants. And the healthiest plants are vegetables.

But, dear friends, I know that my interest in the vegetables I eat now will not last forever. Don't get me wrong, I love my carrots, I actually like having broccoli and coliflower for breakfast, and lettuce is kind of interesting to munch on. But I'm looking for some variety here. So, escapists, suggest to me your favorite vegetables.

PS. Also, I'm kind of a dick, so I'll be pointing out every fruit, seed or grain which gets suggested as a vegetable. Sorry, it's just my way. Though I appreciate those as well. It can't hurt to have some variety in my consumption of fruits, grains and seeds as well, so go ahead and suggest them too. They're still a hell of a lot healthier than the processed foods that used to make up the vast majority of my diet.

I quite like cucumbers. Also, tomatoes, but they are technically a fruit. >_>

Fun fact: The cucumbers are actually a fruit too! They're still good though. I like pickles too, but they probably lose the good for you element after you add that much salt. Oh well. And god do I love tomatoes.

Walk into a fruit and or veg grocery and stand as close to the centre of the store as possible,spin around for 30 seconds with your finger pointing outwards and your eyes closed.

Stop.Open your eyes and see what you get.

If you get a fruit,grain or seed.
Fall to the floor and start screaming.

Yep! Any part of the plant the primary purpose of which is to hold seeds and be eaten by animals who will then pass the seeds helping the plant reproduce is a fruit. So cucumbers qualify.

Eggplant (*coughauberginecough*) and sweetcorn. I know, they're fruits. I second the cucumber, it is quite plain but can be eaten in so many ways, and with so many things! I hate celery, but if you're a fan of peanut butter, then peanut butter + celery = awesome snack. Beetroot is also very nice raw, but a little messy.

Potatoes and Sweet Potatoes. Sweet Potatoes make for healthy fries and Potatoes make for good soup (try adding bits of ground beef to it too).

Don't know if you know this vegetable over there but in English it's called: endive, sla is pretty diverse too.

Carrots. Yummy. ^_^

But if you can, make yourself Corn on the Cob as much as you can. Always fun to eat unless you have braces.

Also, potatoes. Everyone loves potatoes.

If you had asked for fruit though, I would have immediately suggested Kiwis.... Dammit, now I'm craving kiwis.
