Scout - Standard scatter gun, pistol, atomizer or fish
Soldier (my main) - Black Box, reserve shooter, equalizer
Pyro - Degreaser (anyone not using this weapon for pyro is a bad pyro), flaregun, axtinguisher
Demo - Grenade launcher, sticky jumper, half-zatoichi
Heavy - Tomsalov, sandwich, fists of steal
Engineer - Loadout varies depending on gametype, usually either the standard loadout but replacing the wrench with a jag, or a battle-engi with gunslinger, widowmaker, pistol
Medic - standard loadout with ubersaw
Sniper - Machina, SMG, tribal shiv
Spy - Standard knife (though I really want the spycicle), dead ringer, enforcer

Right now my loadouts are as follows

Scout: Soda Popper, Bonk, Sandman
Soldier: Cow Mangler 5000, Righteous Bison, Disciplinary Action
Pyro: Degreaser, Manmelter, Axtinquisher
Demo: Loch n' Load, Splendid Screen, Persian Persuader (though sometimes Half-Zaitochi)
Heavy: Brass Beast, Buffalo Steak Sandvich, Warrior's Spirit
Engineer: Frontier Justice, Wrangler, Gunslinger
Medic: Overdose, Quick-Fix, Amputator
Sniper: Sniper Rifle, Jarate, Bushwacka
Spy: Ambassador, Your Eternal Reward, Cloak and Dagger

I play the spy the most out of anyone, and I've found this to be my favorite set. It makes it so I can hide, snipe, and take down an engi nest really easy. And if you can't take down an engi nest then you are worthless as spy.

Engineer: Frontier Justice, Handgun, and Wrench
Sniper: Machina, Jarate, and Bushwacka
Medic: Medigun, Syringe Gun, and Uber Saw
Spy: Ambassador, Strange Knife, and Cloack and Dagger.

Heavy: Minigun, sandvich, gloves of running urgently.
Engineer: Pomson (sometimes frontier justice, The Wrangler, The Jag.
Medic: Crusader's crossbow, (medigun or kritzkrieg depending on offence or defense), the ubersaw
Sniper: Machina, jarate, bushwhacka.
Spy: L'etranger, Spy-cicle, cloak and dagger.

Though all of those change when I play Vs Saxton which is most of the time.

Sniper: Sniper Rifle, Darwin's Danger Shield, Bushwacka, Orange Gibus.
Spy: Enforcer, Knife, Cloak & Dagger, Orange Gibus.

This is my default loadout for each class, as I find these items useful in the most situations.
However, I'll often end up changing my loadout depending on the circumstances of the game.

And despite my eternal status as a pitiful scout, I use the Soda Popper, Pistol, and Sandman.
Snipers are generally just very counter to my idea of fun in the game (I like close conflict, fast-paced action, and risk). Getting insta-killed from across the map? Bah. If a sniper kills me, I usually just switch to Scout (with Bonk to close the distance) and kill or harass him until he switches to something else. It's super effective. They'll try that Jarate + Kukri (whatever the melee weapon is that crits so much) trick, but I've done this enough that most Snipers don't really stand a chance (wasn't always that way. I had my longest deathstreak doing this once when I was newish: 22 deaths).

Favorites for each class:
Spy: Vanilla everything, because they are in my opinion the best possible, maybe one day I'll get the enforcer, but I doubt i'd use it, that decloak is just too much
Medic, I'll go with the health restoring needle gun each time, with the uber ill use ubersaw and ill use the saw with the healing taunt with the kritz
Scout: Pan (Because god I love to pan people in the face) scattergun and bonk, or mad milk
Soldier: I enjoy the liberty launcher set with the equaliser
Demoman: Vanilla with the pan
Heavy: Minigun, sandvich and gloves of running urgently
Pyro: Degreaser, flare gun and axetinguisher
Engy: Frontier justice, Pistol and mini sentries, yeah, mini sentries are awesome
Sniper: Vanilla but with the shiskahana

Dead Ringer)

I try to use as many weapons as I can, usually, depending on the situation and the mood I'm in. I'll use the Quickfix, for example, if I'm a second Medic, or the Backburner/Phlogisticator if I'm a Pyro attacking an incoming force, etc. I'll oftentimes switch to the Cow Mangler, or the Mad Milk, or the Scottish Resistance, etc. for the fun of it. My most common ones, though...

Scout: Scattergun (FaN on 2fort), Pistol, Holy Mackerel (Atomizer on 2fort)
Soldier: Rocket Launcher, Shotgun, Equalizer
Pyro: Degreaser, Reserve Shooter, Backscratcher (Fire Ax if medics are helping)
Demo: Grenade Launcher, Sticky Launcher (Sticky Jumper if I'm in a jaunty mood), Scottish Handshake
Heavy: Natascha, Shotgun, Eviction Notice...generally focusing on my shotgun, oddly enough
Engie: Shotgun (Pomson if I'm dealing with spies), Pistol, Wrench
Medic: Blutsauger, Medigun, Bonesaw...mainly because I have the strange versions of all
Sniper: Sydney Sleeper, Jarate, Tribalman's Shiv...because nothing beats killing someone by making them bleed, then turning that bleeding damage into mini-crits
Spy: Enforcer, Knife, Cloak&Dagger (Dead Ringer if I'm desperately trying to capture intel)

I love fighting Dr. Spycicles! Especially as a Pyro. The spycicle is listed as a "silent" weapon, which is a pretty laughably inaccurate claim when you know what sounds to listen for. If you hear a loud crackling noise, someone just got backstabbed, and if you hear a hissing sound when you set someone on fire, you airblast and start burning again.

Spies always seems surprised when I kill them, chase them down, and kill them again.

You're thinking of the Your Eternal Reward (the genuinely silent weapon). You can still disguise with the Spycicle.

Well I only play Sniper... so Huntsman, SMG, Kukiri...
I know I'm boring... but it works... huntsman is ridiculously easy to get headshots with and even body shots kill in a couple of hits... and if I run out of ammo I can still use mah SMG to defend mah self...<.<

Engineer: Shotgun, Luger, Gunslider/Southern Hospitality
Medic: Syringe, Medigun, Vita-Saw
Sniper: Machina, Jarate, Bushwacka
Spy: Big Kill (which I can aim better than the Revolver for some reason), Knife, Watch\
