Dynasty Warriors is a contender, as are Crackdown and Psi-Ops. I think the winner is the original Drakengard: I actually beat the first level 3 times while on the verge of sleep. It's that easy.

Drakengard was really easy...until the final boss and their rhythm rings of doom...but either way, that was the game I played when I wanted mindless slaughter.

Agh, don't even remind me of the final boss. Giant floaitng babies of doom suck.

I'd say Guitar Hero is some pretty mindless fun.
On lower difficulties like Hard and Medium, just numb out, and enjoy the experience man.
But be sure to come back to reality for the solo.

Nitro Family should also be mentioned, I think. It was a Serious Sam spin-off, yet a well made one. I remember it had a bullet-time mode when you filled up a kill meter, when everything slowed down and "Ave Maria" was playing while you were blasting the rest of the baddies to pieces. Hilarious.
