The thing to keep in mind is that ultimately, its a simulation. Yes, it is rather hard to have the actual feel of what would truly happen due to camera crews, however much of it can be simulated based upon what has happened when law and order breaks down during natural disasters and other occurrences such as riots.
My father-in-law did point out something interesting from his military experience, however, and in many ways the concept of the show is one of the thought processes at work with boot camp training for new military recruits. You take the new recruit, take them completely out of real life and real occurrences, then stick them into a simulated environment of (what is at the time) a completely unreal situation.
Granted, with the military its much more rigid than "here, try to figure this out all on your own," but the concept is still there.
