Skarin's Rice and Chili Chicken Dish

Ingredients

1,5 KG chicken breast (3.3 lbs, sliced)
1 CUP sundried tomatoes (chopped)
2 CUP cherry tomatoes (halved)
1 CUP chicken stock
1 CUP scallion green (sliced)
1 CUP scallion (sliced)
1/2 CUP red bell pepper puree
2 X garlic clove (chopped)
1 X green chili (chopped)

3-4 TBSP olive or veg oil

Method

- Chop up the sundried tomatoes, red chill and garlic
- Dry-roast cumin and coriander until fragrant
- Add bell pepper puree, red chili, sundried tomatoes, cumin and coriander to a blender
- Pulse-blend with oil or a sip of water if the paste is to thick for the blender
- Blend until smooth, then add the green chili and pulse one or two times to keep it chunky

- The next day remove the chicken from the fridge around 30-60 min before cooking,
prep the scallions, cherry tomatoes and cook the rice.
- Heat a big pan with lots of surface and brown the chicken, work in batches and
don't overcrowd the pan, one layer at the time, park on a plate and repeat
- Deglaze the pan with the chicken stock and return all of the chicken
- Then add the cherry tomatoes and most of the scallions (keep some for garnish)
- Simmer until homogeneous, then season with honey, lime juice, ground celery seeds, salt and pepper
- Serve on rice and garnish with sliced scallions, this recipe is good for around 6 servings

Fairly simple curry recipe here for you, it's always worked brilliantly for me. Don't ask me to convert measurements, I don't do imperial.

500g boneless chicken
1 onion (chopped)
1 T peanut oil
1 t green curry paste
1 can light coconut cream
1 clove of garlic
60ml chicken stock
Steamed rice for 3 or 4 people
Roasted peanuts (your discretion on how much)

1) Cut chicken into pieces.
2) Saute onion and garlic for about 5 minutes
3) Add curry paste and saute for a further 1 minute
4) Add chicken, coconut cream, and stock. Cook for about 15 minutes
5) Serve with steamed rice and garnish with roasted peanuts. Serves three (though you could probably manage it for four).

My first attempt at actually writing a recipe, hope I did alright there.

Ingredients:

* 2 eggs, beaten
* 1/3 plain low fat yogurt
* 1/2 cup vegetable oil
* 1 cup mashed bananas
* 1 1/2 cups white sugar
* 1 3/4 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt

Directions:

1. Preheat oven to 165 degrees C (325 degrees F). Spray one 9x5 inch loaf pan with non-stick spray coating.

2. Blend together the eggs, yogurt, oil and bananas.

3. Sift together the sugar, flour, baking soda and salt. Add to banana mixture and mix well.

4. Pour into prepared loaf pan and bake 1 hour and 20 minutes.

I felt this was too much sugar so feel free to cut back on that a little bit. I'm going to remake it that way soon but feel free to experiment with the ingredients. I had the idea of blending in some strawberries but never got around to it.

Cut it into thick slices and grill.
While this is grilling, grate a load of cheddar or mozzarella cheese.
