Have you used many mods? Apparently there’s some good ones, but I’ve yet to even finish a vanilla playthrough. I also just seen an article about different builds, and I’m leaning towards the Euphoria one -

I would certainly recommend finishing a vanilla playthrough once, or at least getting familiar with the combat and mechanics before thinking about any mods. That's because the two most interesting mods are overhauls that effect that combat and systems and deciding which, if any to use, depends on how you feel about the gameplay. Also since they are significant overhauls that even effect the leveling system, you'll want to start a new game with either.
These mods are called Ghost Mode and Enhanced Edition. Both of them make the enemy AI a bit smarter, make the loot and leveling system make system, and fix some of the weird details about how various enemies and items work together. The big difference between them is that Ghost Mode pretty much keeps the core gameplay intact, while Enhanced Edition changes the combat completely. EE replaces the auto-target or lock approach with a purely directional strike, where you have to be more precise, so it's more like Darks Souls or the recent Assassins Creed games instead of this weird Arkham-lite thing in vanilla.
Essentially, GM was designed to "fix" the quirks of the game while EE was designed with the premise that combat kinda sucks, a sentiment shared by many. I think those that complain about W3 combat by (unfairly, IMO) comparing it to Dark Souls should check it out. Since I personally rather enjoy W3's combat as-is, I like Ghost Mode.
If you don't care about any of that stuff, everyone should install Friendly HUD. It gives you more options to control which portions of the HUD are displayed. I like to use it to show only the minimap when out of combat which for me strikes the perfect balance of immersion and convenience (some players claim to like not having a mini-map but I wouldn't know how to find my way). IIRC, Friendly HUD is included in the two overhaul mods GM and EE.
A rather popular one as I remember is called Preparations. This one adds a lot more manual steps to doing alchemy, akin to the first two games in the series. The idea here is to simulate Witcher lifestyle, so instead of simply meditating to restock your potions and stuff you have to craft them all each time. You also build actual fires to meditate. While I like the idea, I personally find it adds tedium not immersion. I'm a basic ***** and I like convenience and fun not chores.
A personal favorite of mine is Gwent Plus Plus which adds more card properties to the gwent cards. This mod is for those who like playing the gwent minigame and just want to change things up a bit on replays.
Of course there are all sorts of mods for appearance, texture, etc. Personally I don't find the texture mods add anything but many seem to like them, and I also do not prioritize high-end graphics so I'm the wrong person to speak about that stuff. And of course the updated version is supposed to be coming out this year anyway. My favorite visual mods are the ones that change the appearance of the Griffin witcher set. One of the funniest and memed things about the game is that this set of armor is easily the most powerful in the early game but it looks like shit.
