So, I started a Spanish class this week and can't pronounce the rolling r (the rr sound) at all. Been practicing for a few days and sometimes it happens for a second, then it's just gone. Has anyone here gone through trying to get this, or do any speakers have some advice? This is driving me crazy.

Its one of those things that some people just cant get a hang of. Fold the tip of your tongue back slightly to touch the top of your mouth behind your teeth. Its difficult for me to explain, but yeah, keep practising.

Also learn "El perro de san Roque no tiene rabo porque Ramón Ramírez se lo ha robado" by heart.

I think it goes:

El perro de San Roque no tiene rabo
porque Ramon Ramorez se lo ha robado.
El perro de Ramon Ramirez no tiene rabo
porque se lo han robado.
Quien le ha robado el rabo al perro
de San Roque?.
Ramon Ramirez ha robado el rabo
del perro de San Roque?.

It's a good tongue twister about Saint Roch's dog who has no tail because Ramon Ramírez stole it...er, I digress but it should get your R's rolling about.

Umm....press your tongue against the roof of and exhale. That's the best explanation I can come up with. Things like this just come naturally to me.
