Bioshock. Great voice acting, great story, great immersion (especially if you listen to the audio diaries).
The poor, poor puppies...

Gears of War 2 has a nice single player campaign.
The first time I heard that audio diary, I had no idea what was going on until
Andrew Ryan revealed the mind-control phrase. Before it, I thought the kid was just extremely obedient.

I was watching my friend play this part. I teared up. That crack stung my mind and then the kid going "No, no no no..." then finally *Crack*

I've seen the Orange Box mentioned a few times, but specifically get your hands on a copy of Portal. You won't regret it. Having HL2 and TF2 ship with it only make it all the better. I'd also recommend tne solo campaign for Modern Warfare. I found the sniper mission mid-game completely immersive. If you're into more retro games, I'd highly suggest the original Deus Ex. If you can get past the outdated graphics, the experience can be quite visceral. I can't speak for the second one, but I heard it doesn't play quite as well. I'd also throw out Dawn of War. I've found its play perfect for a quick palette cleanser, when you're a bit rpg'd out.

Portal will fix you right up. Don't let the hype fool you. It's a really good game. Just don't go spouting "The cake is a lie" after playing. The time when that was still relevant has long passed.

The observant questionnaire said:
WoW is a drug, but an innocent drug don't blame it because you got addicted to its effects.
I could go on a massive rant about how wrong with everything you just said is, but instead I'll settle for:

"The OP isn't addicted to WoW, has in fact just quit it, and would like to know if there are any nice games we can recommend, so what's your point?"

On topic, the Half Life series is nice and immersive, or you could try Fallout 3, Mass Effect, or Warcraft 3 if you wanna go oldschool.

Or if you wanna go REALLY Oldschool try playing the best game ever - Abe's Oddysee. Available on Steam!
