I was under the impression that all humans had died off after the apocalypse in Darksiders 1, long before Death was called down by War.

War's story takes place a long time after the apocalypse way after Humanity has been destroyed. 1) War was called down DURING the Apocalypse. He mentions the other Horsemen aren't there. Also I think the 'Original' 4 horsemen were War, Death, Famine and Pestilence which would actually make for a really cool Co-op game at some point

Also I doubt the Horsemen's existence is dependant on humanity in this universe, since they existed before humans came to be.
Though the Albrecht Dürer woodcut gives him a trident, even if he doesn't seem to know how to use it. I guess he's just happy to be out of whatever grave he got pulled from.
