You're doing it wrong.
I know this because I did it wrong the first time, too.
See, the problem with Uncharted 1 is that it was balanced to use melee finishers much more often than you'd think. In fact, the game relies on two tactics to kill people: the headshot and the running and gunning towards the enemy for a melee insta-kill (which you wouldn't think to do because you just assume that the guy who took three bullets to the chest and is happily shooting at you with an AK wouldn't fall down with a single punch... but he does).
So that's its main fault. When you adapt to that you realize that the game is much more fun if you snipe at guys with shotguns and shoot from the hip a lot to kill guys with handguns with melee finishers.
Of course, Uncharted 2 is much, much better designed. Shooting works much better and melee becomes much more of a stealth tool (in Uncharted 1 doing stealth is reduced to beign completely out of sight and getting a stealth kill on the first guy before the rest start shooting at you).
All in all, Uncharted 1 is a great game as well. I've gone through it a couple of times, which is a lot, since I don't generally finish games I don't enjoy, much less replay them. It's just not as good as 2, but it's well worth a playthrough, even if you've played 2 first.
