In the Heroes of Might and Magic Series, one of the factions is the Necropolis, which consists of units like skeletons, zombies, vampires, liches etc. They were actually my favorite faction in HOMM IV, since you could amass absurdly large forces of skeletons if you raised your foes corpses, and I love it when gameplay and flavor have good synergy in a game.

Decap Attack!

never was it more fun to throw your own head at people, along the same line of thinking I'd say neverdead as well.

Grim Fandango. Shadow man.

There are a lot more depending on your definition of undead (does Alucard from Castlevania:SOTN count?)

Dead Space 2 allows you to play as a Necromorph in the online multiplayer.

Red Dead Redemption: Undead Nightmare to a certain extent.

That's about all I can think of that hasn't already been said or ruled out.

A game came out recently called "Neverdead" I think it was, there is a ZP review of it. You don't control an undead but you do control someone who cannot die and get's his body blown apart repeatedly, he is kinda like a zombie so that may qualify but perhaps not what you were looking for.

How the hell has Stubbs the Zombie been mentioned only once? You play as a Zombie and infect humanity. You throw your organs as grenades and use your hand to mind control people. Seriously, play it now.

And Grim Fandango fans, I heart you.

Surely, you mean Heroes 3 - in 4 you'd be hard pressed to amass skeletons. Especially since the Necromancy starts rising ghosts and vampires (unless you fill your army slots and block the better things). H3 doesn't have such problems - you just straight up run with thousands of skeletons (no exaggeration) after a while.

And in a similar vein - Disciples has an undead faction - check them out. Especially Disciples 2 (because it's the only one I've played), the undead kick ass. They are the race that would take over enemy capitals the easiest. And that is no small feat - each capital has a guardian who is absurdly powerful. I can't remember the exact stats off the top of my head (and a minute of googling didn't find them) but they have something like 800 HP (as opposed to maybe the 500 one, or at most two, units in your army may have), has 80% damage reduction (as opposed to the average of 0 of your creatures), attacks all enemy creatures with what I believe is 95% accuracy (that's the highest possible. The normal one is 80%). And the undead can easily take on that.

Civ 4 if you get Fall From Heaven 2 mod. Which you should probably get if you own Civ 4

You were right, I got the wrong game, I actually meant HOMM V, which had a similar system in which you simply got an absurd amount of skeleton archers after a while. Good times.
