So my games are as follows:
Uncharted 1
Uncharted 2
Resistance -Fall of Man- (I'll get 2 when I beat it)
Little Big Planet
Monster Madness -Grave Danger-
Condemned 2 -Bloodshot-
Dark Kingdom
Just Cause 2
inFamous
Prototype
Dragon Age
Soul Caliber 4
Ratchet and Clank -Tools of Destruction-
Red Faction -Guerrilla-
Killzone 2
Sonic's Ultimate Genesis Collection
3D Dot Game Heroes
MAG
Katamari Forever
Army of Two
Saints Row 2

What am I missing? I don't like Assassin's Creed and I don't like Bioshock. I don't like Fallout 3, and Oblivion is only fun (and barely due to such awkward controls) on PC. I also Don't like God of War or Metal Gear Solid
EDIT: PSN Downloads:
Bejewelled 2
Numblast
NOBY NOBY BOY
Flow
Hustle Kings
Turtles in Time
Everyday Shooter
Fat Princess

Demon's Souls.
I'm not a fan of the MGS series. I suck at them ><
As for Demon's Souls.. ehh maybe? I dunno, I don't want to have to swear at the game every five minutes, but when it's cheap, I'll pick it up.

So what else is there?
Beyond that list in the OP, and the two recommended by Hazy, those are all the 'must owns' that I think of when I think PS3. Unless someone has some obscure title that got mediocre review score, but they just loved, I'd say you've probably got the best the PS3 can offer.

Oh! Red Dead Redemption!
There we go. I noticed that wasn't on the list.
Get that, and THEN you'll have the best the PS3 can offer.

EDIT: And Heavy Rain.

Are you fairly cautious?
Do you know how to operate a shield (i.e holding down L1) and manage an inventory?
Did you answer yes to any one of these?

'Grats, kiddo, Demon's Souls is the game for you.

I will forever be perplexed as to why people berate that game for it's difficulty,[footnote] (not directing this at you)[/footnote] when the game was never designed to be difficult [http://www.destructoid.com/demon-s-souls-was-never-designed-to-be-hard-154315.phtml].

When you die, you'll know it, and it won't feel as if it's unfair. The game rewards caution and patience greatly.

Do yourself a favor and check out the greatest game of last year.

That seems like a pretty comphrehensive list. You could try Final Fantasy XIII, although I don't know if you'd like it, depends on taste. Check out some reviews first.

If you liked Tools of Destruction, you would probably like the most recent one for the PS3, A Crack in Time.
Fuck that game. Oooh I hated FF13 like a seething fanboy.

Here's some slightly oddbeat suggestions:

Heavy Rain, Demon's Souls, Folklore.

As for PSN titles: Stardust HD, Flower (amazing if you can appreciate it), Rag Doll Kung Fu (best party game, avoid if single player only).

Yeah RDR Sounds pretty sweet, and Heavy Rain looks good and all, but it's something I'd pick up after the first price cut, maybe.

Is Folklore any good? I've always been wanting to try it, but the lack of trophies sets me back for whatever hypocritical reason.

If you're a gamer that is into the trophies mindset, don't bother. I liked it. It has style and some amazing visual design. Gameplay is a little bland at times, but the design makes up for it.

Best to rent it, but I wouldn't advise you to buy it with that sentence of you. Get Stardust HD then.

I'm not a trophy whore. It just says something about the game designers to put the tiny piece of work into the game to make trophies.

What does it say about them?

About the game itself: It was popular enough to warrant adding trophies.
About the game designers: The game was worthwhile and meaning full enough to them to warrant putting a little extra work post-production.

Trust me, Red Dead Redemption is worth every single penny.

Easily the most engrossing title this year.
