Look at it like Highlander. There can be only one. Once it is whittled down to that it is not as if Evil will destroy itself, It simply means its won, and it controls everything it wishes to. Then its either time to enjoy the spoils, procedure to torture and torment what is left remaining or both.

There is a world of difference between "Stupid Evil" and "lawful evil".

They wouldn't know, they've never won :p. I imagine they expect to lose and if they did win the henchman would say something like:

"What do we do now, sir?"
"...I-I ddon't know, I didn't think this would actually work."

In all seriousness, they would probably conquer the world :).

Very true, this is why the Empire in Star Wars is actually a really awesome evil because it has a political agenda as well as exploiting people in bad ways etc.

When the bad guy wins he spends the rest of his life twirling his evil mustache and continues to evil the place up, he can do whatever he wants.

See, if I can defeat the bad guy by merela asking him "Okay, and then what?", then he ovbiously isn't worth the time of day. And that's...pretty much all of the comic book villainy...

A well-done villain is hard to pull off. I mean, if I was a villain I wouldn't wanna destroy the world, because the world happens to be where I keep my stuff, for one. But yeah, the motivation of a villain is where it counts that fleshes out the character.

Depends on the villain. I feel as though in most cases they'd continue as they were, sans the annoyance of the heroes involved.
Or perhaps they move to the next stage of their plans? Once again, likely varies villain to villain.

If the villain actually considers himself evil, he's probably either terribly written, or in a comedy setting where part of the point is this question being exploited. Sometimes you get people like The Operative, from Firefly/Serenity, but mostly if a character describes himself as evil, he has no depth and is nothing like a realistic human being.

Any villains that aren't a stupid Saturday morning cartoon cliché will have some ambitions, which usually are what drives the plot and the heroes don't need to want anything. Those villains will achieve their ambition once the heroes are out of the way. So what evil does when it wins varies on a case-by-case basis, but is usually pretty well-defined. Unless, as previously mentioned, the villain is terribly written.
