What does it take to kill a death claw?

I have no idea what you're talking about since I've only played 3, but I didn't see them until level 20+ so I didn't have any issues. I let one live and follow me around as a pet, killing people for me, until it turned on me and I had to put it down.
The strategy for killing them, best I know, is to avoid standing straight in front of it (due to their lunge attack) and try to cripple its legs. If they don't have a dart gun or rail rifle in New Vegas and mines are out of the question, I don't know how you would go about doing that other than VATS and lots of bullets.

I would advise raising your level first.
As to the gun of choice, I used plasma rifles, which could take as many as four hits for the higher ranked deathclaws, and was instakill for the regular ones. ( same with the cazadores)

I used to use the boxing gloves to knock them out, then fire into it with a decent melee weapon while boon shoots at them too... in fact it's best to try and get your companion to distract it, and when they get knocked out, vats the blighter and use boxing gloves to get a 1 hit knockout on them. Try and find some high ground that will slow down the deathclaw, snipe them from a distance to get their attention, 1 at a time.

Get an anti-material rifle with the highest-grade custom ammo and you'll stand a chance. That is, wait until level 15 at the earliest.pablogonzalez said:

At your level, I would recommend either level up to get stronger...

There are several ways you can combat Deathclaws and live to tell the tale.
1) Get a shitload of mines. Frag mines work best, but plasma mines work too. Get about five to eight of them and place them in one big pile. Get the Deatclaw directly inbetween you and the mines and get their attention. Make sure you stand back.
2) Anti-Material Rifle or This Machine with armour-piercing rounds. This is the expensive route, but also the easiest.
3) Mini-nukes.
If you're low level and poor, there are two ways you can deal with them.
4a) Find a rock and place yourself on top of it. Make sure there's no way the Deathclaws can get up onto the rock, otherwise you're screwed. The Deathclaws should pile around the rock trying to swipe at you, regardless of the fact that they can't reach you. Have fun.
4b) If there are no rocks around, make sure you have a decent mid-distance weapon. Something like the laser rifle will do. Aim for one leg and keep shooting at it until it's crippled. The Deathclaw should now walk pretty darn slowly toward you, allowing you to just walk backwards and shoot at it until it's dead. For maximum safety, cripple both legs.

I remember going to Quarry Junction, but I was a reasonable level. It didn't stop me getting my head ripped off by the Mother Deathclaw though. I used rifles or a grenade launcher to get them from a distance but I had the Alien Blaster if they got to close.
Im more impressed it took 2 shots to kill you. Normally its insta-death.
Buuut Anti-Material rifle with Incendiary rounds (Bought for about 5000 caps from Gun Runners) or i found the Hunting Shotgun with Magnum rounds are monsters.

If you're getting the deathclaw on its own then, if you're tough enough, good with unarmed weaponry, and have the Ranger in Novac teach you the palm strike move then with luck you can knock the thing to the ground and beat it to death while it languishes there. This is a bit riskier than everyone else's strategies, however, as you need to be the roughest, toughest bastard in the wasteland and I don't think you're it.
A sneak attack critical with an anti material rifle firing Armour piercing rounds with 100 guns skill, combined with better criticals and bloody mess perks kills most death claws in one hit. If you need to kill one at close range, get a riot shotgun and a stockpile of slug rounds and just Spam the bastards. This can kill the Legendary death claw in about 2 mags, which you can get through pretty quickly.
Also, invest in some good Armour and a tonne of stimpacks.

Unarmed is beyond ridiculous. You can 1 hit kill a legendary deathclaw with the right stuff without the use of an chems (I.e Psycho)
For example. I took out a rather large crowd of deathclaws in sexy nightwear simply by punching. And the 1 time my punch fails to kill a deathclaw instantly then they freeze due to my epic luck with paralyzing palm. Then if you use the "Slayer" perk (Which increases your melee speed by something like 30%) And use the super heated saturnite fist (Bring a saturnite fist to the toaster in old world blues) which increases your melee speed further meaning effectively everything dies. As when I crit they set on fire :/ as well as being super speedy.
But yeah eventually that can get boring D:
