In Fallout 3:

Step 1: Get a Dart Gun and the Gauss Rifle(AKA the only reason to do Operation: Anchorage)

Step 2: Fire Dart Gun at Deathclaw. No more pounce attack.

Step 3: Fire Gauss rifle at it's head a few times. Watch the gibs fly, and collect arm for Gauntlet.

The Anti-Material Rifle or Gauss Rifle, depending on if you're better with Guns or Energy Weapons, plus armor piercing rounds and a sneak attack critical will make those giant lizards deader than dead. Going in guns blazing will only get you killed unless you've got a high Explosives skill and a Grenade Machine Gun, which is an expensive way to go about it, but feels more badass than slowly sneaking around the rim of the quarry for sniping. But whatever weapons I end up using, I usually put off any deathclaw slaying until my level is somewhere in the twenties, so I'd recommend the same for you. Also, stop skipping through NPC conversations. There's useful info in the things they say, and if you don't stop and listen very once in a while, you'll just be stumbling aimlessly through the game and your experience will suffer for it.

I'd suggest Fawkes. But then I figure this is New Vegas we're talking here.

Did you talk to anyone after leaving Doc Mitchell's house?
none important... i played fallout 3 so i had a basic idea of the controls and stuff so..yeah
And yet here you are asking people for help on how to kill a powerful creature at level 2.

Are you trolling me?

Also if you don't intend to talk to anyone and not follow the story or anything then I really don't think you should be playing this game, doesn't seem like your cup of tea.

I like piling grenades around a mine or failing that take all those dynamite charges (forgot what they're called) from the Powder Gangers and put 10+ them down in one spot. Stand across from it and shoot the deathclaw so it runs at you and trips the charges. That should pretty much kill one depending on how fast it's running when the mines go off.

Best part of this plan, and I use the term plan loosely is that everything you need is available at low levels.
(raid the N,W,S,E Powder Ganger camps for the the boom)

This Machine with Armor Piercing is pretty badass. Power Armor also kind of helps for when they do get a bit too close. But personally my balls are made of pure steel because I walk around in a Roving Trader Outfit and NCR Ranger Helmet.

Yes, they did.

Repeatedly. There are road blocks, signs everywhere, and you are even warned back in Goodsprings not to go.

Bah Humbug Sissies. Real men Punch deathclaws in the nose to show dominance. Multiple times.
This. With the right Perks, level 20-ish and a Ballistic Fist. You can slaughter the whole Quarry within 5 minutes without needing to take a break. Bring Med-X, Psycho and Super Stims. And anything else which gives +DR and +DMG from any of the DLCs if you have them.

Seriously though, if you maxed out later with a Ballistic Fist and took all the right Perks, especially when you are built high on Agility and Strength, basicly Runspeed (you can actually distance yourself very fast from them by running backwards) and punching power, well at that point nothing is a problem. Except several Enemies with Ballistic Fists. They can drain your HP really quickly (Caesar's Tent is the only place this happens)

Otherwise, any long range weapon, preferably sniper with JSP Hand Load, Anti-Materiel Rifle or a scoped Hunting Rifle with appropriate Ammo and a good vintage Point and you can cripple and kill them before they even get close enough.
