1. Clerks.
2. Eternal Sunshine of the Spotless Mind
3. Fight Club

Also, your description of films-slash-movies fails because you list Evil Dead 2. If you think that movie is deep and requires thinking, you're not very deep yourself. No offense. (I loved the Evil Dead series, btw. Boomstick ftw.)
You're crazy, of course I don't think Evil Dead II is a film I was just listing it as one of many on a list of favorite films/movies. I consider Evil Dead II a movie and also a great homage to everything that's fun about horror movies.

The Princess Bride, its cheesy but its got great comedy and action, great characters and a good enough story to me and the romance isn't poured on too thick.

Probably The Matrix. Because it's awesome and didn't become a trilogy. Nope, it didn't. I'm telling you, there was not a sequel. EVER.

But if I could choose a tilogy, the original Star Wars trilogy as a whole. I don't think that the individual movies were the best, but the trilogy was AWESOME!!!

Well, since I'm currently obsessed with it, Rebuild of Evangelion 2.22. Such a lovely movie...
I just saw the first two Rebuild movies myself a few days ago. While the first movie was almost a scene-by-scene retelling of the original show, the second one had some interesting new stuff going on. I still think the story works much better as a series instead of a movie, but both movies look absolutely beautiful...
That ending scene in the second movie where Shinji rescues Rei looked jawdroppingly gorgeous. And it looks like Asuka will have an eyepatch in the third movie so that alone will be worth the watch.

Re-Animator. i'm not much for movies in general (i prefer almost every other medium of entertainment), but Re-Animator is easily the most entertaining movie i've ever seen.

i'm also a big fan of Tarantino, Miike, and Lynch, and there's a handful of other movies i adore, but everything else i'm ambivalent at best towards

Yea, I've seen the movie 3 times now and I keep enjoying it. There's actually a lot of speculation around that the rebuild movies are actually a sequel to the original series + EoE.

It may suffer a tad since for some reason, photobucket resized the total image, but it's very interesting to note all these things.

I can't wait for Q and Pirate Asuka. Apparently it'll be coming out this summer, and I've also heard rumors that it may be a double feature with 3 and 4 together.

Bladerunner, i have never seen a more brilliant piece of cinema than BR.
The athmosphere, the music, the characters, and how fricking awesome is my fellow countryman Rutger Hauer as Roy Batty?
It is pure awesome, the entire movie....well, movies...seeing the different versions.
And i kinda liked the one with voice over...
