Need for Speed: SHIFT. I like the semi-realism and the more-or-less faithful recreations of most of my favorite cars.

Wangan Midnight Maximum Tune 3 DX plus. It also wins the prize for the best name. Unfortunately this beauty can only be found in japanese arcades. It has the best drifting mechanics I have seen.

FlatOut: Ultimate Carnage. There aren't many racing games that I like since I'm kinda crap at them, but FlatOut is just pure, well, carnage. The more stuff you wreck the more bonus you get, fits me perfectly. :D

Crash Team Racing for the PSX was fantastic.
Mine has to be a tossup between this and Jak X Combat Racing. The car customization was too entertaining for me when I was younger.

Need For Speed: Most Wanted
Need For Speed: Hot Pursuit 2010
Burnout: Revenge

I pretty much spent ages 7-12 on Most Wanted and Burnout so I'm really exited for the new Most Wanted game coming out this year. Hot Pursuit 2010 was the first game I got when I decided to buy a PS3 and it's probably some of the most fun I've ever had in a racing game.

Mario Kart DS is the best of a series of great racers. It had a good selection of tracks and the tightest control in an of the games.

Also, F-zero GX. Still holds up excellently with it's beautiful graphics and balls-out difficulty.

I love Race Driver GRID too. I've always had a soft spot for Codemasters, but the DiRT games never really got me interested. I'm sure they're great, and I've considered buying them on many occasions, but I just simply prefer tarmac racing over dirt racing. I loved GRID's realistic tracks and cars mixed with the really intense driving feel. The myriad of different event types was another great thing about the game, and the presentation of everything was top notch, just like pretty much all the other recent Codemasters racing games. I can't wait for the sequel.
+1
Race Driver Grid is my alltime favorite racing game. It has some nice realistic aspects; like choosing sponor offers and see the logos painted on your cars (Ebay etc.) but the gameplay is a little arcade-like, to keep things fun. The different racetypes, as you mention, also add to the overall variety. The difficulty is hard, but forgiving, depending on how your settings. There are plenty of settings, as you can adjust the difficulty of handling your car via 5+ variables (understeer etc.), along with the cleverness of the bots.

Burnout: Paradise on the other hand, I didn't enjoy very much. The gameplay is purely arcade styled, albeit better than Need For Speed games, which share some of the same traits: open-world, arcade racing. The whole game consists of 5 or so racetypes and they all take place in the same world. The only goal is to beat all the events in the game, which will take forever and eventually gets boring.

I loved Need for Speed: Hot Pursuit. I thought it was the best racing game I'd played in years.

I loved the first couple Burnouts too. Burnout 3 especially, for the aforementioned destruction missions.

Never really got into Sim racers; if a car doesn't have a boost button, it's not for me.

I must confess, I've hardly played racing games, but out of the few I have, it's got to Kirby Air Ride. I'm actually going to buy it again, I miss it so.

I'm hoping that, when I actually get around to playing an F-Zero game, it'll be a favorite too.

F-Zero GX. Every time I play that game, I end it with sweat on my forehead. It's really intense...
Seriously Nintendo, publish a new F-Zero for WiiU. F-Zero GX was awesome.

I'm not sure which is my favourite. As above F-Zero was incredible. Mario Kart has had some fun installments and Need For Speed Hot Pursuit was quite good. I also loved Diddy Kong Racing since it offered variation.
I guess if I had to make a choice I would have to go with Banjo Kazooie Nuts & Bolts because it made room for creativity when making vehicles. Making a space shuttle? Done. Making a tank that got the ability to grow wings? Done. Make a tank that can lose its outer shell and become a jet bike? Done. I have made planes, I have made helicopters, I have made transforming vehicles. Having the chance to be creative separates this from the rest.

Burnout, anything that isn't Paradise or 1, they're all fantastic.
I dunno why Mario Kart is getting so much favorites, then again maybe I'm just bias because every time I play the game I get nailed with everything and fired off cliffs. Hell I get hit with blue shells when I'm in 2nd, I just get close enough to the giant undependable nuke that is the blue shell.

Well at the moment I'm playing my recently purchased copy of Gran Turismo 2 for the PS1 and it is quite good but my favourite racing game is either:
- Crash Team Racing
- Mario Kart Wii
OR
- Burnout 2: Point Of Impact

Trials Evolution. I just like the chaotic nature of motocross racing without the need for fantasy weapons to mix things up.

Wipeout 2097, it was the pinnacle of the Wipeout franchise I think. The newest one is nice and fun but it just doesn't seem as tight as 2097.

Or maybe Burnout Revenge for similar reasons.

-Mario Kart (all, but the most loved one is 64 by a fair difference)
-Burnout (not so much the latest installament thougt, save for Paradise)
-Gran Turismo (I still have to play 5!)
-Need for speed: Shit 1 and 2 (I thougt they were decent enough, taking into account all the haters at least...)
-Crash Team Racing (Or CTR for you hardcore fans)
-Flatout 1, 2 and carneage (Classics!)
-Wipeout (I dont remember much about this one, except it was FUN)

Yeah I think those are the main racers I enjoined over the years :)
