]Well, my all-time favorite is FLCL, followed by Madoka Magica, K-ON!, Evangelion, and also Death Note.
OP already said he's seen Death Note. However, I will support everything else you said.

Also, love the Mado/Homu avatar. So cute!

Anyway, just wanted to pitch in behind Evangelion and Puella Magi Madoka Magica. Additionally, I would like to suggest Revolutionary Girl Utena (my all time favorite anime) and Noir (which may be closer to your taste if you liked Black Lagoon).

Evangelion, Madoka, and Utena... I like me my Deconstructionist anime. Tropes are best when they're being totally fucked with. ^^

My top 5...is really hard to narrow down, I'll make it 10

10 Cowboy Bebop
Probably one of the "best" animes in terms of pure quality of writing, animation, direction, and what not. (Really good English Dub if you're into that) There are just 9 I like more but I'd have to kick my self if I didn't mention it.

9 Death Note
So very intense. A true crime thriller in every sense of the word. It's less like a game of cat and mouse than it is a game of cat and cat with machine gun.

8 K-On!
Better than Death Note and Cowboy Bebop? Naaaa. It just pushes all of my right buttons. Mostly I love the music. It's funny but not the funniest anime I've seen that would be Lucky Star.

7 Lucky Star
It makes me laugh every time I watch it. The OAV movie is particularly pee-in-your-pantsable.

6 Clannad
On the full opposite end of the spectrum the saddest thing I've ever laid eyes on. I watched the whole series in 24 hours and cried for 20 of them. It would be number 1 on my list if the ending didn't massively suck. If you haven't watched it yet, you should just don't watch the last episode.

5 Read or Die
Oh no the middle of the list! Oh well, the more I like something the less I usually have to say about it and this is one of those cases.

4 Code Geass
The only reason this isn't higher on the list is because I'm convinced it's too good. I hold the end of season 2 up as the best end EVER!!!! And the convoluted web of intrigue that leads up to that moment is all very cool. I may be a little biased though, I enjoy watching smart people lead double lives, like this, Death Note, or Breaking Bad.

3 Mai Hime
Half high school drama half giant monster fights! If that description doesn't sell you nothing will.

2 Rin: Daughters of Mnemosyne
It's very tight. It's 6 episodes and moves at a rapid clip. Not to mention it's chock full of nudity and violence! I mean I like it for real reasons like the story and the pacing and the choreography of the action scenes, but yes the unabashed way they show blood, guts and nudity is refreshing.

1 Melancholy of Haruhi Suzumiya
There's something special about this one. It's riveting, it's unique (At least I think it's unique, if you know anything else like it I want to know), it's interesting, it's funny, it's just plain well done. I recommend it highly.

Cowboy Bebop still takes my no. 1 spot, but it's so stereo-typically the best that I'm getting bored of it being there...

I'll put a special call out to the Ghost in the Shell series seeing as I don't think anyone else has, it has such a rich story and characters combined with action that it's guaranteed to leave you satisfied.

Here's my list again:

1. Cowboy Bebop
2. Full Metal Alchemist Brotherhood
3. The Melancholy of Haruhi Suzumiya
4. Ghost in the Shell (notably 2nd Gig)
5. Mirai Nikki
6. BECK
7. Bakemonogatari
8. Serial Experiments Lain
9. RahXephon
10.Puella Magi Madoka Magica (had to be in here, sorry Samurai Champloo :( )

Here's my full list; anything that's a 10 needs to be watched. http://myanimelist.net/animelist/DragonBossk

I know it's not a show but seriously, play the game. It's free, and will pull on your heart strings!
Ha I just knew you would post this Caramel. It truly is a great game, and thankfully for me was a superb introduction to visual novels. I vote it the best game of 2012.

The obvious answer is Tengen Toppa Gurren Lagann.

But I started watching Detroit Metal City and... oh man, that's a great anime. I highly recommend it.

My Top 5:
5. Gurrent Lagann
Possibly the most quotable anime of all-time, Gurren Lagann is...look, do I really have to say anything else? Because I can't think of anything. Also, it might be the most mentioned anime here.

4. Steins;Gate
I first created my Top 5 list around September. At that time, Gurren Lagann occupied the #4 slot, and Death Note had the #5. Then I watched Steins;Gate. I guess you didn't plan for this, huh, Light?

3. Neon Genesis Evangelion (+ The End of Evangelion)
Yes. This. Unlike everything else which rests comfortably in its spot on the list, Evangelion fought for this spot tooth and nail. If there was something in danger of being knocked off, it would be this. By far the most flawed work on this list, Evangelion's is sloppy as hell, from tip to top. It has some kind of problem with virtually every part, from imagery, to music, choreography, plot, theme...yeah, everything. But when Evangelion is good, it is so absolutely, gut-wrenchingly good that it actually gets away with all that.

2. Puella Magi Madoka Magica
We're at the home-stretch, and have reached what is bar none the best anime of 2011. As I was watching it, I knew that it had the potential to supplant my #1, but it didn't (for reasons I'll discuss). However, after having watched it to the end twice, partway through twice, and watched the recap movies, it edged slightly higher to equal my previous #1. Setting that aside, this show might actually be perfect. If not, it's probably the closest thing. Rarely does money and quality come together so perfectly. It looks gorgeous, sounds beautiful, it's excellently plotted and, equally importantly, perfectly paced. One of the best things I can say about Madoka is that it doesn't f***ing waste your time. It's twelve episodes, and frankly after watching it I wish every anime could be twelve episodes so they wouldn't be padded out with meaningless material. My only complaint would be the ending, which I think many people liked, but I personally did not. It wasn't awful, no, and it did several things in the post-climax wrap-up which made me feel much better about the ending, but it just wasn't enough to entirely knock another anime (one which did have a good ending) from the top spot...

2. Code Geass
Code Geass is not perfect. Code Geass is not even close to perfect. Its tone is erratic, its plot not wholly solvent, its fanservice is bothersome, and it is the only entry on this list that suffers from power creep. But it is also ridiculously amazing. It's at once near Gurren Lagann-level in your face and restrained like Madoka. In fact, that's an apt analogy, because Code Geass combines Gurren Lagann's raw action and Madoka's emotional assaults (not to say Gurren Lagann doesn't have its own emotional gut-punches), and then its own political drama to the mix. Lelouch is often compared to Light from Death Note, but that's not giving him enough credit. Lelouch has layers of complexity (more than he thinks he does) Light lacks (try saying that five times fast). I mentioned erratic tone, and while this can be irritating, the scenes at school also serves to counterpoint the war drama, particularly when the two begin to mix. The plot's...lack of cohesion is certainly understandable when it is so incredibly dense, and the question of who exactly knows which paradigm-changing plot point becomes so incredibly up in the air. And yes, Code Geass has its share of fanservice (and no one has a lower tolerance for fanservice than me - even most women have a higher tolerance than I do*), but it is implemented weirdly naturally and well.

And, to top it all of, Code Geass manages after fifty episodes to conclude all of its plot threads (well, all the ones you can remember) in an ending of such beauty and finality that only the lowest class of human would ask for a third season.

*This is no longer strictly true. Media saturation has corrupted my once paladin-like resolve. I still have a lower tolerance for fanservice than, for example, JesuOtaku.

More Words:
For fun, here are all the anime I've watched that I considered worthy of a 10, 9, or 8.

Tier Two (8):
Durarara!!
Kokoro Connect
Mobile Suit Gundam 00
Fullmetal Alchemist: Brotherhood
Darker than Black (season 1)
Baccano!
Trigun
Yu-Gi-Oh! 5D's
Neon Genesis Evangelion
Mirai Nikki
Fullmetal Alchemist (2003 series)
Bakemonogatari (Did I really give this an 8? Hm...)

Tier One (9-10): But which ones are 9's, and which ones are 10's?
Code Geass
Puella Magi Madoka Magica
Steins;Gate
Gurren Lagann
Death Note
Fate/zero
Another

*they're all 9's. Except for Madoka. I said perfect, didn't I?

My favourite anime?

Either Gundam 00 or Steins;Gate

Gundam 00 (the first season) was amazing. Fantastic battles, interesting characters, incredibly smart writing and this omnipresent grey morality that infiltrated every nook and cranny of the show. It was AMAZING. Second season upped the ante on the fights, but lost a lot of the grey morality which was so important to making the first season as awesome as it was. Definitely worth a look. Just avoid the movie.

As for Steins;Gate...It's a FANTASTIC time travel story about a faux mad scientist guy working with some friends on some weird experiments and inadvertently discovers time travel. And things only go more insane from there. All of my friends who watched it before I did told me the same story: "One you hit the WHAM episode halfway through, you will NOT be able to put the show down. You will finish the anime that night, regardless of what you need to do the next day". And they were RIGHT about that. It's a MUST watch. I'm serious. Do it now.
