Part of me would like to say something niche and unknown for cool points but yea, Doom 2 all the way. That or Duke 3D. Well, the Duke 3D map editor.

Terra Nova was awesome, and I say that from having only played the demo.

Crusader is one game I never got to play but from what I've heard it was also a classic.

Almost the entire Apogee stable, Duke and Keen too ofc...then all the classics like doom, civ and system shock

Anything by Bullfrog. Populous, theme Hospital/Park, Syndicate, Magic Carpet, and of course the amazing Dungeon Keeper.

Westwood were pretty awesome too. C&C, Eye of the Beholder and Blade Runner were all classics. Think Blade Runner was on Windows though.

X-COM games (yes, even the sequel. I frigging loved the sequel, even the very annoying bits), Privateer and X-Wing. Probably others too, but those are the only ones I remember right now.

Stronghold was and is an awesome game! Loved it to bits.

Primarily Tie Fighter. No other Star Wars games have come close (perhaps X-Wing Alliance though)
Oh and Sim City Enhanced CD-ROM as it had hilarious live action clips. Twas my first ever PC game when CD-ROM tech was still relatively new

The two big ones for me are:

Scorched Earth
Sim City 2000

Great games. Kind of a shame that their successors don't hold up to their DOS counterparts. Sim City Societies? What were they thinking?!?
