I'm gonna have to go with the Morrowind theme as my first. I played Oblivion first, and I haven't actually played Morrowind, but when I heard the theme song, I wish I had played 3 before 4. The Oblivion theme was good and all, but at least for me, hearing the Morrowind theme first would have made it so much better.
Same here, I think the tune sums up the whole story perfectly, I'd certainly have it up there with my favourite themes.
I also love the MGS2, Silent Hill 2, Deus Ex and Morrowind themes but my favourite has to be the one for Uncharted Drake's Fortune:

Well if you mean main menu music then I guess I'd have to go with Gears of War 2's Return of the omen, but if you mean the most commonly heard reoccurring theme then I'd go with Prison Break from The Chronicles of Riddick escape from butcher bay.
I'd have to say I really liked Oblivion's Title theme. However, the other day I got around to playing Doom 3, and it's got an interesting title track (The game having metal as it's title song shouldn't have really come as a surprise to me; but it did).
Zelda, simply because it evokes such nostalgia and joy in my childish mind.
Overall winner for best music though HAS to be The Neverhood. I haven't heard such breative and funny music in a game since.
