Definately the "A song of Ice and Fire" series (Game of thrones etc.)
Just the realism and greyness of the plot is stunning! I don't believe anyone saw the plottwist of the second book coming, and there are very few persons in the book were you can just blankly state: "this guy is purely evil". most of them have real, realistic reasons for doing what they do.
Apart from that, probably Lord of the rings/silmarillion, just because its so immensely detailed.
Uh, also Garthe Nix's Abhorsen trilogi, very imaginative world, and very captivating storytelling.
Lastly, and i'm not sure how international these are, but it's 3 loosely connected books written by a swedish author named Niklas Krog: Heart of a Warrior (En krigers Hjerte on danish), Strength of a sorcerer and lastly Soul of a Ruler. They aren't really a trilogy or series, but they all take place in the same world, just several hundreds, or sometimes thousand years apart, giving you a really cool look at how the events of one book affects the land afterwards.
