Once you have hit that point in minecraft where you have enough materials to build whatever you want, you've been to the nether, your house has been pimped, and there is sort of a lull what do you, personally, do after that.

PS; The person with the coolest idea might win a special prize.

Go exploring.

Put everything except one of each tool, a sword, a bow, some arrows and torches in storage, then build a boat and go on a trip. Sail around until I find somewhere interesting looking and start building a new outpost.

It adds a little fresh excitement to the usual stuff when you know that you're 15 or 20 minutes away from your spawn point in an unknown direction and if you die you might never find your way back to where you are. Needless to say I don't ever change my original spawn point, since that would rather defeat the purpose of the journey.

I useualy start messing about doing things like making a beach full of landmines and luring every monster i can towards it, or seeing how long i can survive in a punching match with a creeper. Firing hundreds of arrows into the air then trying to run into them as they land.

I stop playing Minecraft. Play something else just as addicting, maybe like the old Rollercoaster Tycoon games. *shrug*

Dang it, I needed a friend.

But personally, I just always keep moving and building more stuff around the map. That is, if I am still wanting to play minecraft. But then again, I am mostly a surface dweller on minecraft.
