I'm guessing that one reason for the popularity is that Greek mythology is the one people are most familiar with (we've pretty much abandoned Judeochristian altogether, Norse doesn't have a lot of fans outside the nerd herd, Celtic just became tacky at some point, we learn Roman by comparison to Greek, nobody really cares about Egyptian anymore and nobody knows much about Slavic)... So people understand the references.

Originality isn't dead, it just doesn't sell as well as the same old tired and worn out crap.
People always say they want something new and original, but in the end most just want the familiar mindless junk that gets pumped out of each and every anywhere. If you look hard enough there is always a unique new take on things, sometimes you need to look really hard...
