OT: Something like the Earth Tyrant on FF XII, I stumbled upon him way to early, and thought I needed to fight him, I was about 15 levels underpowered, and was getting thoroughly demolished, I managed it though, to find some thing I should have gotten later...
Oh yeah, and the first few bosses from Lost Oddesy, sunnova ***** they were not fun...
And maybe Sephiroth from Kingdom Hearts... His health bar actually went to far, so they had to add in a shit load of invisible ones that you could not see...
When it comes to FF XII, then the Elder God Yiazmat took forever to kill, not difficult really with the right setup and timing but the 12million HP is somewhat of an obstacle. Luckily as long as you left the area when he didnt have regen cast he didnt recover health so it was more a case of patience and attrition than anything else
The most devious foe in all the Metal Gear games. None of your weapons will harm it, nothing you can do shall surprise or confuse it. It's immortal and no forward of the clock shall wear it down.
It is the ultimate boss fight with it's own song that no other can touch. It is The Ladder of Metal Gear Solid 3.
Serious answer though? Demon Wall from Final Fantasy IV
Quite many of the bosses in the Tales of Symphonia games have this, it's fun and annoying at the same time. Since bosses should be a challenge I think it was good the way it was.
I just cant stand the ones that screw you over, youre just about to finally win and for some reason he'll be invincible to your latest attack, leaving you vunerable and pretty much insta killed >.<
Also, the latest one has to be the tigrex on peace walker, because when he charges, you dodge and he will turn, its locked on >.<
The hardiest boss ever? All of the bosses in No More Heroes had far too much health. Now I know they were the whole point of the game and all but in normal there wasn't a boss amongst them that hadn't worn out their welcome by the time you were done.
The last boss in particular took a fucking age. And about half way into the battle he starts whipping out the insta kill attacks.
Gah, I hated Henry, but the one boss from that game which really annoyed me was Harvey Volodarski, because I could never seem to dodge either a)his annoying exploding doves, or b)his really annoying spin attack.
OT:I remember having a really hard time against Ramirez in Skies of Arcadia. Boy was I pissed when it turned out he wasn't even the final boss. Bloody Silver Tundra...
McCruger or whatever the hell his name was, the last boss from Gun. Why is he so hard, and why the hell can't I just shoot him in the face? He has no head protection at all!
Play Dragon Age:Origins on the hardest mode and go up against Flemeth...that was one of the worst for me, just because I got so close a number of time, just to be hit by her tail or something just as lame!

Well, there was that one in Final Fantasy Xii, but it was both optional and kinda supposed to be ridiculous.
Maleficent in KH1 was a real ***** to fight, until I realised I could just chill out on her back and let a certain ally of mine kill her.

Compare that fight to Veran, or even Twinrova...
world 8-4 Bowser from smb....already a hard level but bowser starts trowing hammers at you. (anyone else understand the random water part in that level.
Why does everyone say this? The Whipfist and the arm blade used in the right combo can make short work of her. The final boss got on my tits more than anything, though.

When you're fighting Graves in his 1st or 3rd form just stay out of his X-axis line till your about to attack.
Ex:IF your about the same level across the screen either move up or down while heading towards him.
If he's flashing that means he's invulnerable to all attacks which means do the same thing but walking away.
The best part is this works really well with Gideons 3rd form's Digital Slash across the map just side step it and you should be off to the credits in no time!
Arkham from DMC3 on Hard mode. You'd think he'd be easier with your badass brother by your side, but no! Vergil just acts like a friggin' puppet that could wander off at any moment. What happened to the Vergil that gave me carpal tunnel from me trying to beat him?!
