Would you have played the Demon/Dark Souls games if there was no online?

I would have certainly played dark souls 1 without online, wasn't aware of online til I got it. Although I haven't played demon souls. Would also have played ds2 without though finishing probably would have been a problem.

I played Dark Souls in offline mode so there you go. I started playing it online but getting invaded on my way through the Undead Burg several times by various incarnations of Mr. "everything +15 with burning scythe of destruction" who instantly killed me annoyed me so much that I started again in offline mode.
Hahahah. If it makes you feel better, alot of the time they end up invading a higher leveled players game and they get destroyed in a single hit themselves.

I played online for both Demon's Souls and Dark Souls on PS3. I'd probably still play them offline, but I really like the passive multiplayer.

In Demon's, I played online until I wanted to manipulate the Tendency system, then played offline but missed the messages.

In Dark, I've always played online, no need not to. I tend to play the first time through as hollow, only going human for scripted NPCs or summons (I like to see how hard the bosses really are, then learn to beat them with my build). I also play first with a melee character, so PvP in the early levels kinda blows, but I got enough kills out of the forest to get a ring of fog at least. That faith/strength melee build was pretty weak anyway until I got lightning/sunlight spears though :), but I wasn't in the mood then to slog it out again.

My second build is a mage, and I'm liking the PvP a lot more. It essentially becomes a game of keep away, and if they can't reliably avoid homing soul mass/pursuers or soul spears, I win - in 1 or 2 shots (50 int + logan's catalyst + crown of the dark sun + bellowing dragoncrest ring). Otherwise, I'm trying very hard to keep them away so they can't 1 or 2-shot me - or worse, lag-stab. But at least it's more of a fair fight (~50% w/d ratio) and nothing makes me happier than killing a red phantom with a lifehunt scythe or chaos flamesword or anyone clearly rolling towards me for a lag-stab, then respectfully bowing to their dead ass - especially since they often use the 'what' gesture when they win, or worse, the 'prayer' or 'prostration' gestures to teabag. At least I can indite their ass if I lose :) and hopefully some darkmoon phantom will pay it back.

Haven't played Dark Souls II yet though, so I can't comment. The degree of randomness I think is part of the fun.

Definitely. I initially bought Demon's Souls because I heard it was really hard, and I wanted to appeal to the masochistic side of myself.

Both it and Dark Souls are very good games with or without the online aspects.

Aside from being invaded occasionally I played demon souls and dark souls 1 totally single player. I never thought the message thing was very interesting and being invaded was just annoying. I don't like pvp.

Dark souls 2 I think was almost too easy because of the multiplayer. MOst bosses are nothing when you can summon help. And unfortunately it seems like several of them almost have to be fought multiplayer unless you're exceptionally good or over leveled. And I find it extremely frustrating how much spells/equipment and trophies are locked behind pvp convenients.

I still would of, in fact I went in to Dark Souls 1 only knowing in the online department that players could leave messages for you. In fact, I played most of my first playthrough offline. It was not for fear of invasions mind you, I just like talking with one group of friends in a party whenever I'm on, and once I learned about summoning and invasions, I still was more compelled to be in my party. In Dark Souls 2 on the other hand, I have reveled in the coop, both in the form of help on bosses, and being help for other people at bosses once I kill the boss myself.
I also took up dragon cult stuff and got max rank. It was fun but magic has a strong advantage against me, and the reward for the level 3 dragon cult status wasn't worth it.

Summons I like. Messages I like. Bloodstains I like.

The sheer amount of lag-stabs, hackers and abusers in the game, I do not like. Seriously, nothing is more frustrating than fighting someone, absolutly kicking their ass for the most part and see them roll away from you, only to immediatly teleport behind you and insta-kill you.

That is not fun for me, and as such, I only go into human form when I know I can immediatly summon about 3 other people to assist me. If someone wants to try to lag-stab me, fine, but I wish them luck when they are taking fire from 3 other players as well.

Yes.
Nowhere near the 200+ hours I spent in it, but yes.

My first character was a ~60 run through the game on my own.
Rest was done with co-op and PvP in mind.

From my experience, the multiplayer element of Dark Souls and Demon Souls boiled down to the actual game occasionally being interrupted by a severely overpowered invader who one-shots me. I've always been purely into the single-player aspect of the game, though I've never deliberately launched it in offline mode to avoid the multiplayer part.
For me it was mostly the same, apart from toying around with summoning to get my brother to help me in my first playthrough when I wasn't able to finish some bosses which were quite easy the second time. Then i soloed them all (with one exception and i regretted it afterwards that i summoned an NPC).
Apart from that: Some invades, ridiculously overpowered guys but I luckily never lost significant progress, just time.
